Pamela's Corn Muffins - Gluten Free

Ingredients

- 1 1/4 cups pamelas ultimate baking and pancake mix
- 1 cup yellow cornmeal
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 eggs, beaten
- 1 cup milk
- 2 tablespoons butter, melted
Recipe
- 1 pre-heat oven to 375 degrees.
- 2 grease a 12-cup muffin tin.
- 3 mix all ingredients together.
- 4 fill muffin tins 3/4 full.
- 5 bake for 15-20 minutes.
- 6 for cornbread: follow directions above. pour into a greased 8-inch square pan and bake for 20-25 minutes. makes 9 servings.
