Ice Cream Blueberry Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 12
  • 2 cups vanilla ice cream, softened (1 pint)
  • 2 cups sifted self-rising flour
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups blueberries, rinsed and drained

Recipe

  • 1 combine ice cream and flour; stir until batter is smooth and thick.
  • 2 mix sugar and cinnamon, set aside 1 tablespoon.
  • 3 sprinkle remaining mixture over batter.
  • 4 gently fold in blueberries.
  • 5 fill greased or paper lined muffin cups 2/3 full.
  • 6 sprinkle with reserved sugar-cinnamon mixture.
  • 7 bake in 400f oven for 20-25 minutes.
