Ice Cream Blueberry Muffins

Ingredients

- 2 cups vanilla ice cream, softened (1 pint)
- 2 cups sifted self-rising flour
- 3 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1 1/2 cups blueberries, rinsed and drained
Recipe
- 1 combine ice cream and flour; stir until batter is smooth and thick.
- 2 mix sugar and cinnamon, set aside 1 tablespoon.
- 3 sprinkle remaining mixture over batter.
- 4 gently fold in blueberries.
- 5 fill greased or paper lined muffin cups 2/3 full.
- 6 sprinkle with reserved sugar-cinnamon mixture.
- 7 bake in 400f oven for 20-25 minutes.
