Cinnamon Ring

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 2 loaves frozen bread dough (must use store bought frozen bread dough not pizza dough.)
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 2 tablespoons raisins
  • 2 tablespoons maraschino cherries, cut in half
  • 1/4 cup butter, melted
  • 1 cup sugar
  • 4 teaspoons cinnamon

Recipe

  • 1 allow dough to thaw.
  • 2 in bunt or large square pan add 2 t melted butter.
  • 3 stir in brown sugar.
  • 4 srinkle with raisins and cherries.
  • 5 cut each loaf into 6 pieces-12 pieces in total.
  • 6 dip into melted butter and roll in sugar and cinnamon mixture.
  • 7 place in bunt or large pan.
  • 8 allow doughballs to rise till double in size (you must allow the dough to double in volume before baking.well worth the time and effort.).
  • 9 bake in 350 oven for about 25 minutes or till golden.
  • 10 let rest 10 minutes.
  • 11 invert onto plate.

Fat Free Bread Machine English Muffin Bread

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 1 1/4 cups warm water
  • 2 3/4 cups bread flour (i have used ap and it works well)
  • 3/4 teaspoon table salt
  • 1 tablespoon sugar
  • 1/4 ounce yeast (or 2 1/4 tsp bread machine yeast)
  • cornmeal

Recipe

  • 1 put all ingredients into the pan of your bread machine in the order suggested by the manufacturer. set to dough cycle for oven baking or cycle for bread machine baking.
  • 2 for bread machine baking: after final rise spray the top of the loaf with water and sprinkle cornmeal on top.
  • 3 for oven baking: preheat oven to 400*. grease a one quart bowl with solid shortening or cooking spray and sprinkle with cornmeal. bake for 40 - 45 minutes.
  • 4 remove from pan and cool on wire rack.

Ginger Orange Muffins

Ingredients

  • 1 3/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 medium orange
  • 1/2 cup softened butter
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup orange juice
  • 1/4 cup finely chopped crystallized ginger

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 combine flour, baking powder, soda, and salt.
  • 3 finely grate zest from orange to make 2 tsp.
  • 4 peel orange, discarding rind and pith.
  • 5 finely chop orange, removing seeds; set aside.
  • 6 with electric mixer, beat butter and sugar until light and fluffy.
  • 7 beat in egg.
  • 8 stir in reserved orange and zest.
  • 9 beat in reserved flour mixture alternately with orange juice, ending with flour.
  • 10 fold in ginger.
  • 11 divide batter among muffin tin, filling almost to the top.
  • 12 bake 18-20 min.
  • 13 or until pick inserted in center comes out clean.
  • 14 remove from pan; cool on wire rack.
  • 15 you can add 1/2 cup of raisins to the mix too for a variation.

Low-carb Pizza Muffins

Ingredients

  • 1/2 cup oat flour
  • 1/2 cup wheat gluten flour
  • 1 cup almond flour
  • 2 eggs
  • 1/2 cup greek yogurt, full-fat
  • 1/4 cup olive oil
  • 1 tablespoon garlic powder
  • 1 cup canned tomato, diced and well-drained
  • 1 tablespoon dried basil
  • 1 teaspoon dried rosemary, crushed
  • 1/2 teaspoon dried thyme
  • 3 teaspoons baking powder
  • 1/2 cup parmesan cheese, grated

  • 1 preheat oven to 325. butter a 12 muffin pan.
  • 2 in mixing bowl, combine flours with baking powder. set aside.
  • 3 mix tomatoes, garlic, and herbs.
  • 4 in separate container beat eggs, yogurt and oil.
  • 5 add cheese to the flour mixture, then add egg mixture until it forms a batter. fold in tomatoes and herbs and transfer to muffin tins.
  • 6 bake 25-30 minutes or till golden brown.
  • 7 let muffins rest 5 minutes, remove from tins.
  • 8 great warm right from the oven with a soup like split pea or lentil.

Dick's Banana Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 8 ounces self rising flour (225g)
  • 5 ounces light muscovado sugar (150g)
  • 1 lb ripe banana (the gooier the better, peeled and mashed)
  • 1/2 teaspoon salt
  • 2 eggs
  • 6 ounces mixed fruit (candied cherries, raisins, sultanas, dried apricots, dick uses more, his loaf is stogged full of fru)

Recipe

  • 1 mix all ingredients together except the driet fruit.
  • 2 once thoroughly mixed, stir in the dried fruit.
  • 3 spoon the mixture into a greased 2 lb loaf tin, spread it out evenly and bake for 1 1/2 hours at 350*f (180*c).
  • 4 the loaf is done when a skewer pushed into it's middle comes out clean.
  • 5 cool on a wire rack before slicing. my husband loves this loaf!

Greek Fried Cheese Bread

Ingredients

  • Servings: 4
  • 1 (1/4 ounce) package active dry yeast
  • 1 1/2 cups water
  • 1 1/2-2 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup cornmeal
  • 1 tablespoon sea salt
  • 1/2 teaspoon ground aniseed
  • 4 tablespoons olive oil
  • 3 tablespoons grated onions
  • 3/4 cup crumbled goat cheese
  • 1 teaspoon dried oregano
  • fresh ground pepper, to taste

  • 1 in a small bowl, stir together the yeast and water until yeast is dissolved.
  • 2 in large bowl, combine all-purpose flour, whole wheat flour, cornmeal, salt, and anise seed.
  • 3 make a well in the center and pour in the yeast mixture.
  • 4 stir until mixed.
  • 5 place dough on a floured surface; begin kneading dough. add as much flour as needed so dough isn’t too sticky.

  • 1 (11 ounce) package refrigerated breadstick dough
  • 1/2 cup finely chopped onion
  • 4 tablespoons butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon cracked black pepper

  • 1 heat oven to 375 degrees.
  • 2 separate bread-stick dough into 2 sheets. on floured surface, roll out to 8â€? lengths. in saucepan over medium heat, cook onions in butter for 3 minutes.
  • 3 spread onion mixture on dough.
  • 4 sprinkle with salt, pepper, and poppy seeds.
  • 5 separate dough along pre-scored lines into 12 sticks.
  • 6 roll each stick jelly-roll style; place in greased muffin cups.

I Like It Pizza Crust

Ingredients

  • 2 1/2 cups milk
  • 1/2 cup oil
  • 8 -9 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 packets fast rise yeast
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 4 eggs

Recipe

  • 1 scald milk and oil together; cool to 115 degrees.
  • 2 combine 5 cups flour, cornmeal, yeast, sugar, salt.
  • 3 add to cooled milk mixture.
  • 4 stir in 4 beaten eggs.
  • 5 turn out on heavily floured board.
  • 6 knead in remaining flour as needed.
  • 7 knead 10-15 minutes or until smooth and elastic.
  • 8 let rise till doubled- twice.
  • 9 roll out and put on fixins and bake at 425 till golden brown.
  • 10 i use a pizza rack to bake it on and grease it before hand.
  • 11 i am sure mixing techniques could be adapted to your own preference with good results.

Onion Stuffed Naan

Total Time: 2 hrs 8 mins Preparation Time: 2 hrs Cook Time: 8 mins

Ingredients

  • 1/4 ounce active dry yeast
  • 1 teaspoon sugar
  • 1/2 cup warm water, 100 f to 110 f
  • 1 egg, beaten
  • 1/4 cup yogurt
  • 1 teaspoon salt
  • 2 3/4 cups unbleached all-purpose flour
  • 3/4 cup all-wheat flour
  • 1/4 cup ghee or 1/4 cup vegetable shortening
  • flour, for dusting and rolling
  • 2 tablespoons ghee or 2 tablespoons shortening
  • 2 cups red onions, chopped very fine
  • 1/2 teaspoon salt (to taste)
  • 1/2 teaspoon cayenne powder (to taste)
  • 1 tablespoon finely chopped cilantro
  • 2 tablespoons finely chopped cilantro

Recipe

  • 1 dough:.
  • 2 add sugar and yeast to warm water. let stand 10 minutes. add yogurt, ghee, and egg. mix. we will call this yeast water.
  • 3 in a large bowl, mix salt and flours.
  • 4 add yeast water, and knead about 12 minutes. cover with a damp cloth, and let stand for about an hour till it doubles in size. ideal room temperature for dough to work will be around 80ºf.
  • 5 punch down dough. knead again and let it stand another hour till double in size.
  • 6 divide dough in 8 equal size balls. each ball will make one naan. if you wish, you may put these balls in a freezer zip-lock bag and freeze away. to thaw, put them in the refrigerator section over night.
  • 7 onion mixture:.
  • 8 melt the ghee in a large frying pan. add the onion and cook 5 minutes or until softened. remove from the heat and add the seasoning and chopped cilantro. set aside.
  • 9 baking naan:.
  • 10 preheat oven to 450 ºf.
  • 11 divide the dough ball into two smaller but equal balls.
  • 12 roll out one dough ball by hand to about 5" diameter set aside.
  • 13 roll out the second dough ball by hand to about 5" diameter. sprinkle about one tablespoon of onion evenly on the top.
  • 14 put the saved 5" diameter dough on top of the onions. press and roll out to 6" round, oval or triangular shape.
  • 15 wet you hand and lightly brush the top of the naan. sprinkle some cilantro evenly on the surface as garnish. press the chopped cilantro leafs onto the surface.
  • 16 brush the top of the rolled naan with melted ghee.
  • 17 grease a baking sheet. put the naan on the baking sheet. bake 6 to 8 minutes.
  • 18 repeat until all the naan have been baked.

Cinnamon Raisin Biscuits (hardees Clone)

Ingredients

  • 2 1/4 cups bisquick heart smart mix
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 2/3 cup buttermilk
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted

Recipe

  • 1 mix bisquick, buttermilk, raisins, cinnamon and sugar until dough forms. turn onto a floured board and knead 1-2 minutes.
  • 2 roll about 1/2" thick then cut into round biscuits. brush tops with melted butter.
  • 3 bake 8-10 minutes at 400* or until lightly browned (i'm guessing at the temperature!). drizzle with powdered sugar glaze and enjoy!

Perfectly Easy Dinner Rolls

Total Time: 2 hrs 50 mins Preparation Time: 2 hrs 30 mins Cook Time: 20 mins

Ingredients

  • 1 cup warm water (105 to 115 f)
  • 4 1/2 teaspoons active dry yeast
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • 3 eggs
  • 1 teaspoon salt
  • 8 1/2 cups unbleached all-purpose flour
  • additional melted butter (optional)

Recipe

  • 1 combine the warm water and yeast in a large bowl. let the mixture stand until yeast is foamy, about 5 minutes.
  • 2 stir in butter, sugar, eggs & salt. beat in flour, 1 cup at a time, until dough is too stiff to mix (some flour may not be needed).
  • 3 cover and refrigerate 2 hours or up to 4 days.
  • 4 grease a 13x9 inch baking pan. turn the chilled dough out onto a lightly floured board. divide dough into 24 equal size pieces. roll each piece into a smooth round ball; place balls in even rows in the prepared pan. cover and let dough balls rise until doubled in volume, about 1 hour.
  • 5 preheat oven to 375°f bake until rolls are golden brown, about 15 - 20 minutes. brush warms rolls with melted butter if desired.

Holiday Buns

Total Time: 3 hrs 15 mins Preparation Time: 15 mins Cook Time: 3 hrs

Ingredients

  • Servings: 48
  • 2 (8 g) packages traditional yeast
  • 1 cup lukewarm water
  • 2 teaspoons sugar
  • 12 cups flour (approximately)
  • 1 cup lukewarm milk
  • 3/4 cup melted margarine
  • 1/2 cup sugar (i use less)
  • 2 eggs, beaten
  • 2 tablespoons vinegar
  • 2 tablespoons salt (i use 1 - 1 1/2)
  • 3 cups luke warm water
  • 3 tablespoons sour cream (optional)

Recipe

  • 1 in bowl: dissolve sugar in lukewarm water, add yeast and let stand for 10 minutes.
  • 2 in large bowl: measure out 12 cups flour and set aside.
  • 3 in large bowl: add milk, melted margarine and sugar, mix to dissolve.
  • 4 add beaten eggs,vinegar, salt, lukewarm water, the sour cream(optional) and stir in the yeast mixture.
  • 5 add 6 cups of flour and mix smooth, then add flour 1 cup at a time, until no longer sticky.(flour is approximate, for most part i use 12 cups of flour - on occasion i need more or a touch less. flour being variable it may take more than the 12 cups of flour - add enough to give you a nice smooth elastic dough).
  • 6 knead on floured board until dough is smooth and elastic, place in well greased bowl turning to grease top.
  • 7 cover and let rise until double in bulk (about 1 hour) then knead down grease top lightly with margarine and again rise until double in bulk.
  • 8 knead down, let dough rest ten minutes and shape into buns (many old recipes suggest the size of a large egg).
  • 9 place buns on a well greased large cookie sheet (i put 3 in a row and not touching) lightly grease tops with margarine, cover.
  • 10 after rising 15 minutes press down lightly on top of each bun with the palm of the hand.( if wishing to make dinner roll shaped buns skip this step) rise until double. bake in a preheated 350 degree oven for 20 - 25 minutes until lightly browned -- brush with melted butter and bake a couple minutes more until nicely browned. brush with melted butter when baked and cool on rack. the extra brushing with butter makes for a very nice top. baking time depends on the oven and yield on the size of the buns.

Fat Free Strawberry Muffin Tops

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 cup of splenda artificial sweetener (the one you can bake with)
  • 3 egg whites
  • 1 cup of pureed strawberry
  • 2 tablespoons plain fat-free yogurt (i either use strawberry or vanilla)
  • 1 teaspoon vanilla extract

Recipe

  • 1 combine the first three ingredients together in a medium sized bowl.
  • 2 combine the other four ingredients in a seperate medium sized bowl.
  • 3 then combine the dry mixture to the wet and stir until well combined.
  • 4 drop by tablespoon full onto baking sheets.
  • 5 place in a preheated (350 degrees) over for 12-14 minutes.
  • 6 let cool on pan, then serve.
  • 7 *keep note though -- you might want to spray your pan or use wax paper for the muffin tops will stick after they are done baking.

Fat Free Banana Crunch Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 cup flour
  • 1/2 cup grape-nuts cereal
  • 1/2 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 cup egg substitute
  • 2 mashed bananas

Recipe

  • 1 in a small bowl mix all dry ingredients together.
  • 2 in a larger bowl mix all wet ingredients together.
  • 3 add dry ingrediants to wet ingredients.
  • 4 mix just until combined; do not overmix.
  • 5 bake for 20-25 minutes (or until toothpick comes out clean) in a 350 degree oven.

Fat Free Bagel

Total Time: 1 hr 1 min Preparation Time: 30 mins Cook Time: 31 mins

Ingredients

  • 2 (1/4 ounce) packages yeast
  • 4 1/4 cups unbleached flour
  • 1 1/2 cups warm water (115 to 120 degrees f)
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 1/2 tablespoon cinnamon (optional)
  • 1 tablespoon sugar (optional)
  • 1/2 cup raisins (optional)

Recipe

  • 1 combine yeast and 1 cup of flour.
  • 2 in seperate bowl, combine water, sugar, and salt.
  • 3 add to flour mixture.
  • 4 stir in raisin, cinnamon, and sugar, if using.
  • 5 beat with electric mixture until no lumps remain and mixture is sort of splashy.
  • 6 add raisins, if using, and remaining flour.
  • 7 mix until dough is tough.
  • 8 turn out on floured surface and knead for 6-8 minutes.
  • 9 cover and let rise 10-15 minutes.
  • 10 spray a large cookie sheet.
  • 11 divide the dough into 12 to 24 portions, rolling each into a ball and pulling a hole through in the middle with your fingers.
  • 12 place the bagels on the cookie sheet, cover and let rise in a warm place for at least 20 minutes and no more than 2 hours (or you'll have dough coming out of your ears).
  • 13 meanwhile, put one gallon of water and one tablespoon of sugar in a large pot to boil; reduce to simmering. cook bagels, 4 or 5 at a time for 4 to 7 minutes (depending on the toughness of the skin you prefer - the longer they boil, the tougher they get), turning once.
  • 14 preheat oven to 375 degrees f.
  • 15 bake 31 minutes, or until golden brown.

Cinnamon Pull Apart Bread

Ingredients

  • 2 (1 lb) packages refrigerated pizza dough
  • 1 tablespoon cinnamon
  • 1 cup sugar
  • 1/2 cup butter, melted, plus more for the pan

Recipe

  • 1 heat oven to 375.
  • 2 tear off small bits of the dough and roll them into 1- to 1.5-inch balls. place balls on a plate.
  • 3 combine cinnamon and sugar in a bowl.
  • 4 dip each ball in the butter, then in the cinnamon sugar. drop the balls into a buttered bundt pan.
  • 5 drizzle remaining butter over the top and sprinkle with remaining cinnamon sugar.
  • 6 bake until golden brown, about 40 minutes. remove and let cool 5 minutes.
  • 7 place a plate on top of the pan and carefully flip it over. tap the bottom to release the bread. (i let the pan rest on top of the plate for a while so the bread would disengage by itself.).
  • 8 let people pull the bread apart with their fingers.

I Heart You Scones

Ingredients

  • 1 cup all-purpose flour, plus
  • 2 tablespoons all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain low-fat yogurt
  • 1 egg
  • 1 tablespoon butter, melted
  • 1 cup strawberry, diced small

Recipe

  • 1 preheat oven to 400.
  • 2 grease a baking sheet with butter.
  • 3 in a large bowl, mix together flour, sugar, baking powder baking soda and salt.
  • 4 crush 3/4 cup of strawberries into a puree with the back of a fork, or with a blender.
  • 5 in a separate bowl combine remaining 1/4 cup of diced strawberries with the puree and the yogurt
  • 6 add egg and butter to yogurt mixture.
  • 7 add the yogurt mixture to flour mixture and combine until flour is just moistened-do not overmix.
  • 8 dough will be very wet and sticky but don't worry-you didn't do anything wrong!
  • 9 here's the tricky part! drop dough by 2 teaspoonfuls into a heart shape. try your best! alternatively, drop by rounded tablespoonfuls.
  • 10 bake until golden brown, 12-15 minutes.
  • 11 cool on wire rack for about 10 minutes.

Low-cal Turkey Wrap

  • 1 take corn tortilla and spread the fat-free sour cream all over. then spread the cilantro on it.
  • 2 add the deli meat and roll it like a wrap.
  • 3 70 calories all together.
  • 4 sometimes i heat the corn tortilla before i do this and sometimes i don't. if you don't, you'll feel full faster.

Milk Free Irish Soda Bread

Ingredients

  • 4 cups whole wheat flour (king arthur's is best)
  • 1/8 teaspoon salt
  • 3 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups unflavored soymilk
  • 1 teaspoon lemon juice (reconstituted is fine)
  • 1 cup currants or 1 cup raisins
  • 2 tablespoons honey (or other sweetener (optional)
  • 1/4 cup vegetable oil

Recipe

  • 1 soak the currants (or raisins) in 1/2 cup of water in a microwaveable container and microwave for 10 seconds. set aside. drain before using.
  • 2 sift flour and baking powder, baking soda, and salt together into a large bowl.
  • 3 add lemon juice to the soy milk; then add the milk, drained currants or raisins, oil, and sweetener (if used) and stir until all dry ingredients are moistened. the dough should still be sticky.
  • 4 knead on a floured surface for 3-4 minutes until the dough can be formed into a very soft ball.
  • 5 place on a heavy baking sheet and gently flatten so that it is no more than 2 inches high. make deep cross cuts across the top (nearly halfway through the dough).
  • 6 place in 400 degree oven and bake for 40-50 minutes, until the crust is brown and the bread has a hollow should when tapped.
  • 7 cool on a wire rack at least 10 minutes before slicing. it is best when eaten warm with or without a spread, but is delicious with jam.

Fast, Thin, And Crispy Crust Pizza

Ingredients

  • 1 tablespoon active quick-rising yeast or 1 packet active quick dry yeast
  • 1 pinch granulated sugar
  • 3/4 cup very warm water (not hot)
  • 1 3/4 cups all-purpose flour

  • 1 tablespoon olive oil (optional)
  • pizza sauce, and toppings of choice

  • 1 in a small bowl or glass measuring cup dissolve the yeast and sugar in warm water, stir and set aside for 10 minutes. mixture should begin to bubble and foam at the end of the time (indicating that the yeast is activated & alive.).

  • 4 flour a work surface and knead dough for a couple of minutes until smooth and elastic.

  • 3/4 cup crisco shortening
  • 2 teaspoons lemon juice

  • 3/4 cup sugar
  • 1 teaspoon salt
  • 1/2 teaspoon vegetable oil
  • 1 teaspoon milk
  • 9 large eggs
  • 6 eggs, dye, uncooked and set aside to dry

Recipe

  • 1 soften yeast in 1/2 cup warm water for around 5-8 minutes.
  • 2 meanwhile blend 1&1/2 cups of flour with remaining warm water in a large mixing bowl.
  • 3 mix well.
  • 4 add yeast mixture.
  • 5 mix until fairly smooth.
  • 6 cover bowl with a dish towel and let sit in a warm area until dough mixture has risen, about 1 hour.
  • 7 after about 30 minutes, in a medium sized bowl, mix shortening with lemon juice and grated lemon peel.
  • 8 mix together sugar and salt, then add half to shortening, creaming until fluffy.
  • 9 add remaining sugar-salt mixture stirring well.
  • 10 beat two eggs and one egg until piled softly.
  • 11 add beaten eggs, in thirds, to shortening/sugar mixture and mix well.

  • 1 place butter in a small saucepan.
  • 2 add water, salt, 2 tablespoons sugar, and orange rind.
  • 3 bring to a boil.
  • 4 add all the flour at once.
  • 5 stir until smooth.
  • 6 cook, stirring until the mixture leaves sides of pan and forms a ball that does not separate.
  • 7 remove from heat and cool until lukewarm.
  • 8 add eggs, one at a time, beating after each addition till smooth.
  • 9 drop dough from a teaspoon into plenty of hot olive oil.
  • 10 cook over a moderately slow heat only as many doughnuts at a time as will float easily in the oil.

  • 1 preperatory steps - preheat the oven to 350º. also, lightly butter or grease a baking baking sheet (for convenience, i usually just use a no-stick spray). and last, pour about 1 to 1 1/2 ounces of maple syrup into 4 separate condiment cups; set aside.
  • 2 stir together the cinnamon and sugar, and place the cinnamon/sugar mixture in an even layer in a shallow dish.
  • 3 remove dough from package, and separate dough into 12 individual breadsticks. roll each breadstick in the cinnamon/sugar mixture until both sides are evenly coated. twist each coated breadstick 2 or 3 times, to make a spiral.
  • 4 place twisted breadsticks on the lightly coated baking sheet. bake in a 350º oven for 12-15 minutes or until breadsticks are puffy and lightly golden brown.

Moroccan Chicken On Saffron Rice (ww)

Ingredients

  • 6 ounces long-grain rice
  • 1 pinch saffron thread
  • 2 teaspoons olive oil
  • 16 ounces boneless skinless chicken breasts
  • 2 cups leeks, thinly sliced well-washed
  • 12 dried apricot halves, thinly sliced
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon crushed red pepper flakes
  • 2 cups tomatoes, coarsely chopped
  • 1 cup low sodium chicken broth
  • 1 cup orange section

Recipe

  • 1 in medium saucepan, bring 2 cups water to a boil; stir in rice and saffron.
  • 2 reduce heat to low; cook, covered, 20 minutes, until all water is absorbed and rice is tender.
  • 3 remove from heat; keep warm.
  • 4 meanwhile, in large nonstick skillet, heat oil; add chicken.
  • 5 cook over medium-high heat, turning once, 8 minutes, until browned on all sides and juices run clear when chicken is pierced with fork.
  • 6 remove chicken from skillet; set aside.
  • 7 in same skillet, combine leeks, apricots, cumin, cinnamon and red pepper flakes; cook, stirring frequently, 5 minutes, until leeks are softened.

Perfect Pizza Dough

Ingredients

  • 5 1/2 teaspoons sugar
  • 2 teaspoons kosher salt
  • 1 tablespoon pure olive oil
  • 3/4 cup warm water
  • 2 cups bread flour
  • 1 teaspoon instant yeast
  • 2 teaspoons olive oil
  • olive oil, for pizza crust
  • flour (i used whole wheat flour and found it to be my new favourite(also i do not have a peel and simply us) or cornmeal, for dusting the pizza peel (i used whole wheat flour and found it to be my new favourite(also i do not have a peel and simply us)
  • 3 ounces your favourite pizza sauce, 1 1/2 oz per per pizza (i just use san marzano brand crushed tomatoes, drained, with a pinch of salt, a dash of fresh ground)
  • 1/2 teaspoon chopped fresh herb (such as thyme or oregano, red pepper flakes, fennel seeds, for example, per pizza)
  • grated cheese (a combination of 3 , such as mozzarella, monterey jack, and provolone for just a great cheese pizza)

Recipe

  • 1 place the sugar, salt, 1 tbsp olive oil, water, 1 cup flour, yeast, and remaining cup of flour into your mixer's work bowl.
  • 2 using the paddle attachment, start the mixer on low and mix until the dough just comes together, forming a ball.
  • 3 spray your hook attachment with cooking spray and swap it out with the paddle.
  • 4 knead dough for 15 minutes on medium speed.
  • 5 after 15 minutes, tear off a small piece of dough and flatten into a disc.
  • 6 stretch the dough until thin, hold it up to the light, and look to see if a taut membrane has formed (also called a baker's window), you should be able to see a webbing of membranes and nearly be able to see through the dough.
  • 7 if the dough tears before it forms, if you aren't able to pull it thin to almost see through before it rips, knead the dough for an additional 5 to 10 minutes.
  • 8 form the dough into a smooth ball on the countertop, sealing it unto itself.
  • 9 place the dough ball in a large stainless or glass bowl and add 2 tsp olive oil, tossing to coat.
  • 10 cover with plastic wrap (doesn't have to be a perfect seal) and refrigerate for 18 to 24 hours.
  • 11 place pizza stone or tile onto the bottom of a cold oven (or if your heating element is on the bottom of your oven, simply place stone onto the lowest position oven rack) and turn the oven on to its highest temperature, 500° or mine goes to 550°.
  • 12 split the dough into 2 equal pieces using a knife or dough scraper.
  • 13 flatten each piece into a disc onto the countertop and then fold each piece into a ball.
  • 14 wet hands barely with water and rub them onto the countertop to dampen the surface slightly to make it 'sticky', roll the dough on the surface until it tightens into a smooth ball.
  • 15 cover with a tea towel and let rest for 30 minutes.
  • 16 if you won't be immediately using the second ball of dough, spray the inside of a ziplock bag and place the dough ball into the bag.
  • 17 seal and refrigerate for up to 6 days.
  • 18 sprinkle flour or cornmeal onto peel and place dough onto the peel.
  • 19 using your hands, form a lip around the edges of the pizza.
  • 20 stretch the dough into a round disc, holding the center with one hand and gently pulling the edges outward with the other hand, rotating after each stretch, try tossing if you're up for it, but do not use a rolling pin!
  • 21 shake the pizza on the peel to be sure that it will slide onto the pizza stone or tile.
  • 22 dress and bake the pizza immediately for a crisp crust or rest the stretched dough for 30 minutes if you want a chewy texture.
  • 23 to dress the pizza, brush the rim of the pizza with olive oil.
  • 24 spread the pizza sauce evenly over the pizza.
  • 25 sprinkle the herbs onto the sauce and then any toppings you might want.
  • 26 top with cheese.
  • 27 slide the pizza onto the tile and bake for 7 or 8 minutes, or until bubbly and golden brown, checking the underside for doneness before removing.
  • 28 rest finished pizza for 3 minutes before cutting.

  • 2 (1/4 ounce) packages active dry yeast

  • 1/2 cup sugar

Recipe

  • 1 combine the warm water and yeast in a large bowl. let the mixture stand until yeast is foamy, about five minutes.
  • 2 stir in butter, sugar, eggs, and salt. beat in flour, 1 cup at a time, until dough is too stiff to mix (some flour may not be needed). cover and refrigerate 2 hours or up to 4 days.
  • 3 grease a 13x9-inch baking pan. turn the chilled dough out onto a lightly floured surface. divide dough into 24 equal-sized pieces. roll each piece into a smooth round ball; place balls in even rows in the prepared pan. cover and let rise until doubled in volume, about 1 hour.

  • 1 in bread maker (my model is black and decker) measure first six ingredients in the order listed above into the baking pan.
  • 2 insert baking pan and close lid.
  • 3 select *dough* setting and push start button. there will be a 25 minute preheat delay before mixing begins.
  • 4 the complete signal will sound when dough is done.
  • 5 using pot holders or oven mitts remove baking pan to a lightly floured surface. if necessary, knead in enough flour to make dough easy to handle.
  • 6 divide dough into thirds.
  • 7 roll out one piece of dough and place on pan, top with desired pizza toppings or make into one large pizza.
  • 8 bake in oven preheated at 425°f or 218°c for 15-25 minutes (15 for a fluffier pizza).
  • 9 *note dough take two hours in the bread machine.

Ginger Raisin Muffins

Ingredients

  • 1/2 cup shortening (or marg)
  • 1/2 cup brown sugar
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup molasses
  • 1 cup whole wheat flour
  • 1 cup flour
  • 1 tablespoon baking powder
  • 2 teaspoons ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup raisins

Recipe

  • 1 cream shortening with sugar and salt.
  • 2 blend milk and molasses and add.
  • 3 stir flours and spices.
  • 4 pour liquid ingredients into dry.
  • 5 drop in raisins and stir just enough to moisten.
  • 6 spoon into the well greased muffin tins and bake 400f 20 minutes.
  • 7 serve warm.

Onion Yeast Rolls

Ingredients

  • 2 packages dry yeast
  • 2/3 cup warm water
  • 2 eggs
  • 1/2 cup sugar
  • 1 cup warm milk
  • 1 teaspoon salt
  • 1/4 cup melted butter
  • 4 -5 cups flour
  • 2 cups onions, chopped
  • 2 -3 tablespoons butter

Recipe

  • 1 saute the chopped onions in the 3 tablespoons of butter over mediun low heat till soft, but not burn--set aside (if you need more butter, add just a little at a time).
  • 2 dissolve yeast in 2/3 cups warm water and let sit a few minutes to proof.
  • 3 melt the butter in a pan and cool.
  • 4 in a large bowl beat the eggs; add the sugar, milk, cooled butter, and salt--mix well.
  • 5 add the flour gradually till you can handle it well.
  • 6 let rise; punch down and rise again.
  • 7 roll out the dough into a rectangle.
  • 8 spread the onions (don't worry if there is some butter left on them) over the dough evenly.
  • 9 roll up in a jelly roll fashion.
  • 10 cut into 1" pieces.
  • 11 place cut side down on an ungreased baking sheet.
  • 12 let rise again.
  • 13 bake at a 400 degree oven for about 15 minutes.

  • 2/3 cup frozen concentrated orange juice, thawed

Recipe

  • 1 preheat oven to 375°f.
  • 2 spray a 12 muffin pan.
  • 3 (i'm kinda generous with the spray, want them to come out).

  • 5 cut cranberries in half, then cut each half in half again.
  • 6 now you have 4 pieces, cut each in half again (8 pieces).
  • 7 do this until you have a packed 1/2 cup cut cranberries.
  • 8 cut the frozen small blueberries in half until you have a packed 1/4 cup.
  • 9 cut each mandarin orange section into 6 pieces until you have a packed 1/3 cup.
  • 10 mixing the muffins;.
  • 11 in a mixing bowl add flours, baking powder, baking soda and salt.
  • 12 mix well with a fork.
  • 13 add sugars and mix well with fork and set aside.
  • 14 in another bowl, beat eggs with a fork.
  • 15 add oil and orange juice to eggs and mix fairly well.
  • 16 add egg mixture to flour mixture and stir very well.
  • 17 make sure all the dry ingredients are mixed.
  • 18 add fruit and stir very well.
  • 19 divide equally into 12 muffins pan.
  • 20 bake 10 minutes then turn pan around and bake 10 more minutes.
  • 21 i checked mine early with a toothpick just to make sure they didn't get over done.

  • 2 teaspoons yeast
  • 2 cups flour

  • 1 mix the warm water and yeast in a small bowl to blend.
  • 2 let stand until the yeast dissolves, about 5 minutes.
  • 3 mix the flour and salt in a food processor to blend.
  • 4 add in the oil.
  • 5 with the machine running, add the yeast mixture and blend just until the dough forms.
  • 6 turn the dough out onto lightly floured surface and knead until smooth, about 1 minute.
  • 7 transfer the dough to a large oiled bowl and turn the dough to coat with the oil.
  • 8 cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. punch the down dough and form into a ball.
  • 9 the dough can be used immediately or stored airtight in the refrigerator for 1 day.

Pamela's Corn Muffins - Gluten Free

  • 1 cup yellow cornmeal
  • 1/3 cup sugar
  • 1/2 teaspoon salt

Recipe

  • 1 pre-heat oven to 375 degrees.
  • 2 grease a 12-cup muffin tin.
  • 3 mix all ingredients together.
  • 4 fill muffin tins 3/4 full.
  • 5 bake for 15-20 minutes.
  • 6 for cornbread: follow directions above. pour into a greased 8-inch square pan and bake for 20-25 minutes. makes 9 servings.

  • 2 tablespoons honey
  • 2 cups warm water
  • 1 tablespoon kosher salt
  • 5 -6 cups all-purpose flour
  • garlic powder
  • oregano

Recipe

  • 1 dissolve yeast and honey in the warm water, stirring gently with a wooden spoon. *hint* whenever i am activating the yeast in warm water -- i use a metal (1st choice) or glass bowl. before adding anything into the bowl, i invert it in the sink and let hot water run over the outside of the entire bowl for a minute or two. this way the bowl is already warm when you place the warm water and yeast into it, so that none of the warmth from the water is going to heat the bowl instead of the yeast! :)
  • 2 let rest for 10 minutes.
  • 3 sift together the flour and salt. sometimes i will also sift in some additional spices to make an herbed pizza crust. oregano, garlic powder, basil, and rosemary are some nice additions.
  • 4 add to the wet mixture and knead for approx 10 minutes place the dough in a lightly oiled bowl. cover with plastic wrap and a tea towel. let the dough rise in a warm place, until double - about 1 hour.
  • 5 punch down, knead briefly to let the air bubbles out. top with whatever you like and bake at 425ºf for approx 20 minutes.
  • 6 this recipe also makes great breadsticks. follow same directions as above - when adding the flour and salt, add garlic powder and oregano. let rise same as above. when ready to bake, roll into strips and twist 3 or 4 times. lay on a greased breadstick pan or cookie sheet. brush generously with egg and sprinkle with kosher salt. bake at 425ºf for approximately 5 minutes or until cooked through. enjoy!

Nana Hassard's Super Simple Banana Bread

Holiday Rum Loaf (bread Machine)

  • 3 cups bread flour
  • 2 1/2 tablespoons dry milk
  • 3/4 teaspoon rum extract

  • 3 1/2 tablespoons dark rum
  • 1/3 cup pecan pieces
  • 1 1/2 teaspoons fast rise yeast or 2 1/4 teaspoons active dry yeast
