Harvest Peach Bread

Ingredients
- 6 large peaches, pitted, peeled & pureed
- 1 small peach, pitted, peeled and diced
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon clove (optional)
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup sugar (or splenda)
- 1/4 cup oil
Recipe
- 1 preheat oven to 350 degrees.
- 2 combine flour, baking powder, baking soda, cinnamon, ginger and cloves in small bowl. set aside.
- 3 combine pureed peaches and sugar.
- 4 add oil, eggs and vanilla extract. mix well.
- 5 add flour mixture about 1/2 a cup at a time, combing well after each 1/2 cup added.
- 6 fold in diced peach.
- 7 pour batter into greased 9 x 5 loaf pan.
- 8 bake at 350 for 50 minutes.
- 9 cool, cut and enjoy!
