Harvest Peach Bread

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • 6 large peaches, pitted, peeled & pureed
  • 1 small peach, pitted, peeled and diced
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon clove (optional)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar (or splenda)
  • 1/4 cup oil

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 combine flour, baking powder, baking soda, cinnamon, ginger and cloves in small bowl. set aside.
  • 3 combine pureed peaches and sugar.
  • 4 add oil, eggs and vanilla extract. mix well.
  • 5 add flour mixture about 1/2 a cup at a time, combing well after each 1/2 cup added.
  • 6 fold in diced peach.
  • 7 pour batter into greased 9 x 5 loaf pan.
  • 8 bake at 350 for 50 minutes.
  • 9 cool, cut and enjoy!
