  • 2 seperate into biscuits on a greased baking sheet.
  • 3 bake in oven at 450 degrees for 12 minutes or until brown.

Grandma's Rye Bread

Total Time: 3 hrs 20 mins Preparation Time: 2 hrs 20 mins Cook Time: 1 hr

Ingredients

  • 1/3 cup sugar
  • 2 tablespoons shortening
  • 2 teaspoons salt
  • 1/3 cup molasses
  • 2 cups boiling water
  • 1 (1/4 ounce) package yeast
  • 1/4 cup warm water
  • 2 cups rye flour
  • 4 -5 cups flour

Recipe

  • 1 combine the sugar, shortening, salt, molasses with the 2 cups of boiling water set aside to cool.
  • 2 in separate bowl put yeast and 1/2 cup warm water. let stand for 5 minutes.
  • 3 combine cooled ingredients and yeast. add rye flour and flour. knead for 8 to 10 minutes.
  • 4 let rise for up to 1 1/2 hours or until doubled. punch down and roll into 2 loafs. let rise for 30 to 45 minutes.
  • 5 bake at 350 for 60 to 70 minutes.

Mom's Homemade Biscuits

Ingredients

  • 2 cups flour
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1/3 cup shortening (crisco works best)
  • 3/4 cup milk

Recipe

  • 1 mix together flour, sugar and salt. add baking powder and then cut in shortening with pastry blender until thoroughly incorporated.
  • 2 add milk and mix only until a soft dough forms. dough may be slightly sticky but that is normal.
  • 3 generously flour counter or board and transfer dough on top dusting with a small amount of flour if dough is sticky. pat dough out with hands till about 1 inch thick and cut with biscuit cutter or large glass dipped in flour. place on baking sheet about 1 1/2 inch apart. bake 425 degrees for 12 to 15 minutes or until golden brown.
  • 4 note: do not roll out with rolling pin as that will make for harder biscuits.

Muufo Baraawe

Ingredients

  • 2 cups semolina flour
  • 1/4 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon instant yeast
  • 1 1/4 cups warm water
  • salt

Recipe

  • 1 combine the flours, sugar, onion powder, yeast, garlic, and salt in a bowl.
  • 2 add the water and knead to make a dough.
  • 3 cover and set aside in a warm place for 6 hours.
  • 4 work the dough gently with your hands and set aside to let rise a second time.
  • 5 using wet hands, divide into 6 pieces.

  • 2 cups all-purpose flour
  • 1/4 cup splenda sugar substitute
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder

Grandma's Sweet Rolls

Ingredients

  • 1/2 cup sugar
  • 1 teaspoon salt
  • 2 (1/4 ounce) packages yeast
  • 2 cups milk, warm
  • 4 eggs
  • 6 1/2 cups flour
  • 1/2 cup butter, melted
  • 1/4 cup butter, softened
  • cinnamon
  • brown sugar
  • 1/4 cup butter
  • 1/2 cup karo dark corn syrup
  • 1 cup brown sugar

  • 1 for the goo (you can wait until the rolls are almost ready to start this process):.
  • 2 melt 1/2 stick of butter, 1 cup brown sugar, and 1/2 cup of karo dark syrup in a sauce pan.
  • 3 pour the result into 4 round pans.
  • 4 for the rolls:.
  • 5 combine 1/2 cup sugar, 1 tsp salt, yeast, and milk. let stand for about 10 minutes.
  • 6 beat 4 eggs in a separate bowl.
  • 7 add eggs to the batter and beat until well blended.
  • 8 add 3 1/2 cups of flour to the batter and mix inches.

  • 1 cup mashed banana
  • 1 tablespoon ground nutmeg

  • 1 pre heat the oven to 350 deg.f.
  • 2 mix the mayonnaise and mashed bananas in a bowl. sieve the dry ingredients and add to the wet mixture. mix with hand until smooth.

  • 1 1/2 cups brown flour, wholemeal

  • 1 1/2 teaspoons salt

  • 1 dissolve honey in water. add yeast. leave 10 - 15 minutes to bubble.

Homemade Soft Pretzel Bites

Ingredients

  • 1 1/2 cups warm water
  • 2 tablespoons light brown sugar
  • 1 (1/4 ounce) package active dry yeast
  • 3 ounces unsalted butter, melted
  • 2 1/2 teaspoons kosher salt
  • 4 1/2-5 cups all-purpose flour
  • vegetable oil
  • 3 quarts water
  • 3/4 cup baking soda
  • 1 whole egg, beaten with 1 tablespoon cold water
  • coarse sea salt
  • 1/2 tablespoon unsalted butter
  • 1/2 tablespoon all-purpose flour
  • 1/2 cup milk
  • 8 ounces cheddar cheese, grated

Recipe

  • 1 for the pretzels:.
  • 2 combine the water, sugar, yeast, and butter in the bowl of a stand mixer and mix with the dough hook until combined. let sit for 5 minutes.
  • 3 add the salt and flour and mix on low speed until combined. increase the speed to medium and continue kneading until the dough is smooth and begins to pull away from the side of the bowl, about 3 to 4 minutes. if the dough appears too wet, add additional flour, 1 tablespoon at a time. remove the dough from the bowl, place on a flat surface and knead into a ball with your hands.
  • 4 oil a bowl with vegetable oil, add the dough and turn to coat with the oil. cover with a clean towel or plastic wrap and place in a warm spot until the dough doubles in size, about 1 hour.
  • 5 preheat the oven to 425 degrees f.
  • 6 bring the water to a boil in a small roasting pan over high heat and add the baking soda.
  • 7 remove the dough from the bowl and place on a flat surface. divide the dough into 8 equal pieces, about 4 1/4 to 4 1/2 ounces each. roll each piece into a long rope measuring 22 inches and shape. cut the dough into one inch pieces to make the pretzel bites. boil the pretzel bites in the water solution in batches. we did about 15 bites at a time. boil for about 30 seconds. remove with a large slotted spoon. place pretzel bites on a baking sheet that has been sprayed with cooking spray. make sure they are not touching. brush the tops with the egg wash and season liberally with the salt. place into the oven and bake for 15 to 18 minutes until golden brown.
  • 8 remove to a baking rack and let rest 5 minutes before eating. serve with cheese sauce, recipe below.
  • 9 for the cheese sauce:.
  • 10 melt the butter in a medium saucepan over medium heat. add the flour and cook 1 minute. whisk in the milk and cook until slightly thickened. remove from heat and stir in the cheddar cheese until smooth and all of the cheese is melted. season with salt and pepper, to taste.
  • 11 if you want to make cinnamon and sugar pretzel bites-instead of adding salt, sprinkle the bites with cinnamon and sugar. for the frosting mix-soft cream cheese-about 3 t, powdered sugar, a teaspoon of vanilla extract, and a little bit of milk. whisk together. add more milk if it is too thick, if it is too thin, add more powdered sugar. i don’t measure. i just guess until the consistency is right.*.

Grandma's Zucchini Bread

  • 3 eggs
  • 1 cup oil (shortening or butter if making cookies)
  • 2 cups sugar
  • 2 cups zucchini, grated
  • 3 cups flour
  • 1 teaspoon salt
  • 3 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 grate zucchini.
  • 3 add eggs, oil, sugar, and spices in large mixing bowl and mix well.
  • 4 blend grated zucchini in by hand with a spoon.
  • 5 blend in flour in 1/2 cup increments until well mixed.
  • 6 pour into pre-greased loaf pan till about 2/3 full (do not overfill).
  • 7 test doneness around 60 minutes.
  • 8 cool on baking rack before turning out.

Parmesan Bread

  • 2/3 cup water
  • 2/3 large egg
  • 2 2/3 tablespoons butter, cut in small pieces
  • 2 cups bread flour
  • 3 1/2 tablespoons parmesan cheese, grated
  • 1 1/3 tablespoons sugar
  • 1 1/3 teaspoons dried onion flakes
  • 2/3 teaspoon salt
  • 1/3 teaspoon garlic salt
  • 1 1/2 teaspoons yeast

Recipe

  • 1 combine all ingredients in bread machine according to manufacturer's instructions.
  • 2 process in regular bake cycle.
  • 3 remove from baking pan, and cool on a wire rack.
  • 4 yield: 1-1/2 lb loaf.

Beth's 100% Whole Wheat Sourdough Bread

Total Time: 24 hrs 30 mins Preparation Time: 24 hrs Cook Time: 30 mins

Ingredients

  • Servings: 24
  • 1 1/2 cups filtered water (room temp.)
  • 2 tablespoons honey
  • 2 cups freshly milled whole wheat flour (packaged is fine, though)
  • 1/4 cup sourdough starter, at its peak (whole wheat starter works best)
  • 2 tablespoons oil
  • 1 1/2 teaspoons salt
  • 2 teaspoons bread enhancer
  • 3 tablespoons vital wheat gluten
  • 2 1/4 cups freshly milled whole wheat flour

Recipe

  • 1 the afternoon before you want bread, feed your starter 1 cup distilled water and 1 cup flour (not included in recipe ingredients).
  • 2 that evening, when it is all bubbly and active, combine the first 4 ingredients in a large bowl, cover loosely, and allow to get bubbly like a fed starter does but not at it's peak yet (about 5 hours). this is essentially a sponge.
  • 3 that evening, add remaining ingredients.
  • 4 knead until the gluten is developed and it passes the windowpane test (when a golf sized ball of it is worked and stretched thin, you can see light through it and it doesn't rip), about 6-8 min in a kitchen aid.
  • 5 divide into 2 loaves and shape, placing them into 8.5 x 4.5 greased bread pans (they will be smallish loaves). it would probably make 1 very large loaf in a 9 x 5 pan.
  • 6 cover loosely with oiled plastic wrap.
  • 7 allow to rise until doubled (not very tall, just doubled). this went much faster than i anticipated (6-7 hours). if you have a fast rising starter, i would suggest placing the unrisen loaves in the fridge or a cool place to slow it down a little. this will also develop a more sour flavor.
  • 8 bake at 350 for 30-40 minute.
  • 9 remove from pans immediately and cool on a wire rack.

Mutligrain Straun

Ingredients

  • 7 tablespoons whole wheat flour
  • 1 1/3 cups mixed grains (cooked and uncooked rice, quinoa, millet, etc.)
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1 3/4 cups whole wheat flour
  • 1/4 teaspoon instant yeast
  • 3/4 cup water
  • 7 tablespoons whole wheat flour
  • 1/2 teaspoon salt
  • 2 1/4 teaspoons instant yeast
  • 3 tablespoons honey
  • 1 tablespoon butter, melted
  • 1 cup whole wheat flour

Recipe

  • 1 day one.
  • 2 soaker: mix the first 4 ingredients (7 tablespoons of whole wheat flour, cooked and uncooked grains, salt and buttermilk) to make a thick porridge-like dough. cover and leave at room temperature for 12 to 24 hours.
  • 3 biga: mix the next 3 ingredients (1 /4 cup whole wheat flour, 1/4 teaspoon instant yeast, 3/4 cup water) to form a ball of dough. knead for a few minutes until all the flour has been incorporated. let the dough rest for 5 minutes, then knead again for 1 minute. place the dough in a bowl, cover, and refrigerate overnight.
  • 4 day two.
  • 5 remove the biga from the refrigerator an hour or two before preparing the final dough.
  • 6 cut or rip the biga into smaller pieces and mix it with the soaker. add the remaining ingredients (7 tablespoons whole wheat flour, 1/2 teaspoon salt, 2 1/4 teaspoon instant yeast, 3 tablespoons honey or sugar, 1 tablespoon melter butter or oil) with the exception of the last 1 cup of whole wheat flour - this will be used later. mix well. knead by hand or machine for about 5 minutes until all the ingredients are evenly distributed. add additional flour or water to achieve the proper consistency (a slightly sticky dough that'll hold its shape). if you use pre-cooked grains, you will need to add as much as 1 cup of extra flour because the grains will not absorb a great deal of the moisture.
  • 7 place the dough in a greased bowl and allow to rise for about 45 minutes to an hour or until it is 1 1/2 times its original size. shape the dough and place in greased pans for the final rise. if you want oats or seeds on top of the loaf, spritz the loaf with water and sprinkle seeds before the final rise.
  • 8 while the loaves are rising, pre-heat the oven to 425°f.
  • 9 to bake the loaf, place it in the preheated oven. reduce the temperature after 5 minutes to 350°f and bake for 20 minutes. turn the loaf 180 degrees and bake another 20 to 30 minutes until the loaf is deep brown, makes a hollow sound when tapped on, and when the internal temperature is approximately 195°f degrees.
  • 10 remove the bread from the oven and allow to cool for at least one hour.

Grandma's Rolls

  • 1 put the warm water into a large mixing bowl.
  • 2 add the yeast and stir to dissolve.

  • 4 add 4 cups of flour and stir until smooth.
  • 5 add enough of the remaining flour until the mixture is neither sticky nor dry.
  • 6 cover the bowl and let the dough rise until doubled in size.

My Best Ever Breadmaker Pizza Dough

  • 2 teaspoons sugar

  • 1 tablespoon of your favorite pizza seasoning (mine is wildly delicious italian)
  • 4 teaspoons fast rise yeast
  • 2 tablespoons cornmeal

Recipe

  • 1 measure all ingredients except cornmeal into bread pan in order listed; select dough setting.
  • 2 remove dough to lightly floured surface and cover with plastic wrap; let rise in a warm place for 30 minutes.
  • 3 sprinkle cornmeal on large 16 inch pizza pan or on a pizza stone and press dough into pizza shape; cover with a towel and let rise for another 30 minutes.
  • 4 spread with desired sauce, seasonings and toppings.
  • 5 bake at 425f for 20-30 minutes; i like to partially bake the pizza on a pan for about 8 minutes and then transfer it to a hot pizza stone sprinkled with the cornmeal for the remainder of the cooking time.
  • 6 i find by baking it initially on the pan it is easier to transfer to a pizza stone thus maintaining its large size.

Easy Banana Bread

Jelly Jar Biscuits

Recipe

  • 1 preheat the oven to 425* f.
  • 2 do not mix your wet and dry ingredients together until the oven is very hot or you will not have fluffy biscuits.
  • 3 after the oven is screaming hot, sift dry ingredients together and stir to make sure they are mixed well.
  • 4 add shortening to the biscuit mix and cut in with a pastry cutter or two knives until the lumps are as small peas.
  • 5 add the cold milk and stir until it barely clings together.
  • 6 by hand, knead three or four times.
  • 7 turn out onto a floured board and pat into a disk about 1/2 inch high.
  • 8 cut with a floured jelly jar ( 2 1/2"), give the tops a gentle poke, re-roll scraps and cut, sprinkle each top with a little flour.
  • 9 place biscuits on a sheet pan or cookie sheet with parchment. the closer you put them together the softer they are. i don't let mine touch usually.
  • 10 put into the center of the oven.
  • 11 bake about 11 minutes. depending on the size of the biscuits you can bake them from 8 to 15 minutes. so keep an eye on them.
  • 12 this recipe can easily double or even quadruple.

Homemade Soda Crackers

  • 1 1/2 cups pastry flour
  • 2 teaspoons instant yeast
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon sugar
  • 6 tablespoons water
  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • gourmet salt, herbs etc. (i used herbs de provence, pink himalayan salt and a bit of kosher salt)

Recipe

  • 1 whisk together the flour, yeast, salt, baking soda, cream of tartar and sugar. set aside.
  • 2 put the water, butter, and oil in a microwave-safe cup, or in a saucepan. heat gently just to melt the butter. remove from the heat, and cool to 120°f-130°f if you don't have a thermometer, this will feel hotter than lukewarm, but not at all uncomfortably hot; it'll be cooler than your hottest tap water.
  • 3 add the liquid ingredients to the dry ingredients. beat at medium, then high speed for a total of about 90 seconds, to make a soft dough. (*i had to add more water in order to get the dough to come together. i probably added 2-3 tablespoons more, 1 tablespoons at a time). the dough should be soft, moist but not sticky and not crumbly or tough.
  • 4 place the dough in a lightly greased bowl, cover it, and refrigerate overnight, or for up to 18 hours. it won't rise much; the bowl can be small. (flavour increases with the length of the refrigerator rest).
  • 5 remove the dough from the refrigerator, and allow it to rest for about 15 minutes. preheat the oven to 425°f.
  • 6 lightly flour a work surface (a silicone rolling mat works well here), and remove the dough from its rising bowl. it won't feel like normal yeast dough; it'll be more clay-like. shape the dough into a 3" x 5" rectangular block. pre-shaping it like this will help you roll it out evenly. roll it into a rough 13" x 15" rectangle. it will be quite thin. be sure to keep the rolling surface well-floured, to avoid sticking.
  • 7 starting with a shorter side, fold the dough in three like a business letter.
  • 8 roll it out again, this time to an 11" x 19" rectangle, or thereabouts. the dough will shrink when you stop rolling it; your goal is to end up with a rectangle that's about 10" x 18".
  • 9 sprinkle the dough with your choice of salt (fairly liberally) and herbs, if using and gently press it in with the rolling pin.
  • 10 using a rolling pizza wheel (easiest) or a baker's bench knife, cut the dough into 2" squares. note: if you're using a silicone mat, cut very carefully - you don't want to damage the mat.
  • 11 transfer the crackers to two lightly greased or parchment-lined baking sheets; you can put them fairly close together, as they'll shrink as they bake, rather than spread. prick each cracker once or twice with the tines of a fork.
  • 12 bake the crackers for about 10 minutes, till they're a very light golden brown. watch them carefully towards the end of the baking time; they can darken very quickly. (i got nervous of over-cooking them so turned off the oven a little early. they probably could have cooked another minute).
  • 13 turn off the oven, and open the door completely. leave the crackers on the oven rack; they're going to cool down right in the cooling oven, in order to preserve their crispness. keep your eye on them for the first couple of minutes; if for some reason your oven isn't cooling off quickly, and the crackers are continuing to brown, pull the rack out partway.
  • 14 when the crackers are completely cool (takes about an hour to an hour and a half), remove them from the oven, and wrap airtight, to preserve their crispness.
  • 15 yield: about 45 crackers.

Parmesan Biscuits

  • 4 1/2 ounces butter (chilled & cubed)
  • 4 1/2 ounces flour
  • 1 ounce parmesan cheese (freshly grated)
  • 1 pinch salt
  • 1 pinch black pepper (freshly ground)
  • 1 pinch cayenne pepper

  • 1 preheat the oven to 350f.
  • 2 rub the butter into the flour, by hand or in a food processor, until the mixture looks like fine breadcrumbs.
  • 3 stir in the parmesan, seasoning and cayenne pepper.
  • 4 work the mixture together into a ball and then knead briefly on a work surface lightly dusted with flour until smooth.
  • 5 cut the dough in half, flatten each piece slightly, then roll out thinly between 2 large sheets of saran.
  • 6 lift off the top piece of saran and cut into 2in biscuits.
  • 7 carefully lift them onto a lightly buttered baking sheet, then knead together and re-roll the trimmings to make more biscuits. you should make about 30 biscuits in total.
  • 8 bake the biscuits for 8-10 minutes until crisp and golden. leave to cool on the baking sheets. store in an airtight container.

Parmesan Breadstick Candy Canes

  • 2 teaspoons light corn syrup

  • 1/4 cup pecan pieces

  • 1 heat oven to 375°f
  • 2 spray large cookie sheet with non-stick cooking spray.
  • 3 in small bowl, stir powdered sugar, peanut butter, 2 tablespoons butter and 1/2 teaspoon banana extract until smooth; set aside.
  • 4 unroll both cans of dough on cutting board; divide into 4 equal sections along center perforations.

  • 1 cup rolled oats
  • 2 tablespoons vegetable shortening
  • 1/2 cup dark molasses
  • 1 tablespoon salt
  • 1 package active dry yeast
  • 1 package outdated dry yeast, for flavor (optional)
  • 1/2 cup warm water (about 110-115 degrees f)
  • 5 -6 cups unbleached flour

Recipe

  • 1 pour boiling water over rolled oats in a large bowl, add shortening, molasses, and salt, stir to combine, and set aside, stirring occasionally, until cooled to about 90 degrees f.
  • 2 dissolve yeast in warm water, and proof for about 5-10 minutes or until slightly foamy.
  • 3 add to oatmeal mixture, stir in 2 cups flour, and set aside for about 15 minutes.
  • 4 stir in additional flour, 1/2 cup at a time, until mixture is too thick to stir.
  • 5 turn out onto a floured board, and knead until smooth and elastic, about 5 minutes, adding more flour as necessary, until dough is not sticky.
  • 6 place in and oiled bowl, turn to oil top of the dough, cover, and let rise in warm place until doubled in volume, about 1 hour.
  • 7 punch down dough, and allow to sit for 10 minutes.
  • 8 grease 2 5"x9"x3" loaf pans, and sprinkle with flakes of rolled oats and corn meal.
  • 9 divide dough into two equal size portions, knead and shape each into a roll, and place in the center of the prepared pans.
  • 10 spray or lightly brush each loaf with cold water, and sprinkle with flakes of rolled oats.
  • 11 let rise in a warm, draft-free place until doubled in bulk, about 30-40 minutes.
  • 12 prepare oven by placing one oven rack at mid-height, with the second one below.
  • 13 place an empty baking sheet on the lower rack, and preheat oven to 400 degrees f.
  • 14 spray loaves again with cold water.
  • 15 pour about 2-3 cups of hot water into the empty baking sheet on the bottom rack of oven, taking care not to get burned by the instant steam.
  • 16 place the filled loaf pans on the middle rack, reduce temperature to 350 degrees f, and bake until loaves sound hollow when rapped, about 45 minutes, spraying with cold water after 15 and 30 minutes.
  • 17 when done, the center of the loaves should read about 190-200 degrees f on an instant reading thermometer.
  • 18 remove loaves from oven, set aside for a couple minutes, remove from pans, and return to the oven, bottom side up, for about 5-10 minutes.

  • 1 preheat oven to 440°f.
  • 2 dissolve the yeast in the lukewarm milk.
  • 3 pour the flour and salt into a bowl, make an indent in the top and pour in the milk/yeast mixture.

  • 5 from the center, mix the butter in the flour, till the dough is nice and smooth.
  • 6 set aside for 15 minutes to let it rise.

  • 1 put rolls on lightly greased cookie sheet.
  • 2 let thaw and rise until doubled in bulk.

  • 4 set them aside, either layered between sheets of waxed paper, or any way in which they are not touching as they will stick together.
  • 5 heat oil, just enough to cover the bottom of the pan, until shimmering.

  • 7 set on a paper towel lined plate.

Oatmeal Bread

Total Time: 2 hrs 40 mins Preparation Time: 2 hrs Cook Time: 40 mins

Ingredients

  • 2 (1/4 ounce) packages quick-rising yeast
  • 1/2 cup water (110 degrees)
  • 1 1/4 cups boiling water
  • 1 cup quick-cooking rolled oats
  • 1/2 cup light molasses
  • 1/3 cup butter
  • 1 tablespoon salt
  • 5 3/4-6 cups all-purpose flour
  • 2 beaten eggs
  • quick-cooking rolled oats
  • 1 beaten egg
  • 1 tablespoon water

Recipe

  • 1 soften yeast in the warm water.
  • 2 combine the boiling water, 1 cup oats, molasses, butter and salt.
  • 3 cool to lukewarm.
  • 4 stir in 2 cup of the flour, beat well.
  • 5 add the softened yeast and 2 beaten eggs, beat well.
  • 6 stir in enough of the remaining flour to make a soft dough.
  • 7 turn out onto a lightly floured surface and knead until smooth and elastic about 8-10 minutes.
  • 8 shape into a ball.
  • 9 place in a lightly oiled bowl, turning once to grease the surface of the dough.
  • 10 cover and let rise in a warm place until double (about 1 hour).
  • 11 punch dough down, turn out onto a lightly floured surface.
  • 12 divide dough in half and cover with the bowl.
  • 13 let rest 10 minutes.
  • 14 coat 2 well greased loaf pans with about 2 tbsp of rolled oats per pan.
  • 15 shape dough into loaves.
  • 16 place the loaves into the pans.
  • 17 cover and let rise in a warm place until double (about 30- 45 minutes).
  • 18 mix the beaten egg with the tablespoon of water.
  • 19 brush the tops of the loaves with this mixture.
  • 20 sprinkle the tops of the loaves with a few more rolled oats.
  • 21 bake at 375°f till done, about 40 minutes.
  • 22 cover loosely with foil during the last 15 minutes if the tops are browning too quickly.
  • 23 remove from pans and cool on a rack.

Moldovan Bread

  • 2 cups warm water
  • 2 tablespoons active dry yeast
  • 1 tablespoon sugar
  • 4 tablespoons sunflower oil (or other neutral oil)
  • 1 teaspoon salt
  • 5 cups flour

Recipe

  • 1 in a large bowl mix the warm water, sugar, the yeast, and a cup of flour. mix it with a spoon until smooth. let stand for about 15 minutes - you should start to see the yeast begin to work.
  • 2 mix in the oil and the salt. start adding the rest of the flour, mixing until it is incorporated and the dough comes together.
  • 3 turn out onto a floured surface (i usually use an oiled surface for kneading) and knead until you have a smooth dough, about 10 minutes.
  • 4 place in a greased bowl, cover and let stand in a warm place until the dough is doubled.
  • 5 turn out of bowl onto floured surface. deflate the dough by kneading gently and let rest 15 minutes.
  • 6 divide dough into six pieces and shape each piece into a rope. braid three pieces into a loaf; repeat with remaining pieces.
  • 7 place each braid into a greased loaf pan, cover and let rise until nearly doubled.
  • 8 preheat oven to 400 deg f (200 deg c)
  • 9 bake until golden brown, about 20 minutes.
  • 10 turn out of pans and brush with a little oil.

Peanut Butter-chocolate Chip Banana Bread

  • 2 in a different bowl, add yeast, water, and eggs. combine mixtures and add flour. set in warm place for 3 hours. take fork and poke hole in dough; cover. put in fridge over night.
  • 3 roll dough on floured table. rub with butter and and sprinkle with cinnamon sugar. roll into a log. use fine thread or plain floss and cut into 1 inch pieces. put in greased pan with sides. if there are no sides, the rolls will fall over the sides and make a mess in your oven, and it's not fun to clean up. let stand or rise for 2 hours. bake at 300 degrees until light brown.
  • 4 remove from oven and drizzle topping over rolls, while still warm. yummy, yummy!

Recipe

  • 1 dissolve the yeast in the warm water and proof for a few minutes while you get the rest ready.
  • 2 in a pan, place the water and salt and bring to a boil; add the rolled oats, but do not boil.
  • 3 stir in and cool to lukewarm the brown sugar and butter.
  • 4 when lukewarm, stir in the yeast mixture and mix well.
  • 5 add the flour gradually until the dough is a good consistency to knead.
  • 6 knead 100 times.
  • 7 let rise in a greased bowl until double (about 1 1/2 hours).
  • 8 punch down and divide in half.
  • 9 put each half in a greased bread pan.
  • 10 rise again for about 1 hour or until almost double in size.
  • 11 bake at 375 degrees for 40-45 minutes, putting foil on top after about 25-30 minutes to prevent it browning too much.

  • 1 heat the oven to 375°. place paper liners in a 12-cup muffin pan.
  • 2 heat 1 teaspoon of the oil in a medium skillet. add the corn and 1/4 teaspoon of the salt and cook over medium-high heat until barely tender, about 2 to 3 minutes. then spread the corn onto a plate to cool slightly.
  • 3 in a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, and remaining 1/4 teaspoon of salt.
  • 4 add the buttermilk, egg, and remaining oil to the dry ingredients and stir until blended. then stir in the corn mixture.
  • 5 divide the batter among the muffin cups. bake the muffins for about 16 minutes, or until a toothpick inserted into the center comes out clean. serve warm or at room temperature. makes 1 dozen.
  • 6 tips: choose ears of corn with bright green husks that are tightly closed. the ends of the corn silk should be golden brown, not pale -- an indication that the corn was picked too early.
  • 7 to easily remove corn silk from the kernels, hold the ear in one hand and rub downward with a wet paper towel.

  • 1 1/2 teaspoons salt
  • 1/2 cup nonfat milk
  • water
  • 1 egg
  • 2 tablespoons walnut oil

Recipe

  • 1 bring milk to 100 degrees (try microwaving 20 seconds on high). sprinkle the yeast over the milk, let stand 5 minutes. stir to dissolve.
  • 2 mix flours, flax, oatmeal and salt in a large bowl. make a well in the center and pour in dissolved yeast.
  • 3 draw enough flour into the yeast to make a soft paste. cover and let paste "sponge" for 20 minutes.
