Light Cream Cheese Cornbread

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • 1 (8 ounce) package neufchatel cheese
  • 1 large egg
  • 1 (15 ounce) can corn (or creamed corn, i only have had corn on hand)
  • 1 (8 1/2 ounce) package corn muffin mix (i use jiffy)
  • 2 tablespoons butter
  • 1/3 cup sugar

Recipe

  • 1 preheat oven to 350. melt butter and cheese together just enough to soften.
  • 2 mix together all of the ingredients & pour into a baking pan.
  • 3 bake for about 40 minutes.
