Greek Cornbread

Total Time: 1 hr 10 mins Preparation Time: 10 mins Cook Time: 1 hr

Ingredients

  • 2 1/2 cups cornmeal
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 4 cups summer squash, grated
  • 3 eggs
  • 1 cup cottage cheese
  • 1 1/2 cups feta cheese, crumbled
  • 1 cup milk
  • 8 tablespoons butter, cut in pieces

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 grease and flour a 9x13x2-inch pan.
  • 3 mix cornmeal, baking powder and sugar.
  • 4 in another bowl, combine squash, eggs, cottage cheese, feta cheese and milk.
  • 5 add cornmeal mixture to wet ingredients and blend well.
  • 6 pour into pan, dot the top with butter.
  • 7 bake until browned on top, about 1 hour.
