Fantastic Apricot Muffins

Ingredients
- 1 cup chopped dried apricot
- 1 cup boiling water
- 1 cup sugar
- 1/2 cup butter or 1/2 cup margarine, softened
- sour cream (1 cup)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon grated orange rind
- 1/2 cup chopped nuts
Recipe
- 1 soak apricots in boiling water for 5 minutes.
- 2 in a large mixing bowl, cream sugar and butter until fluffy.
- 3 add sour cream; mix well.
- 4 combine dry ingredients; stir into creamed mixture just until moistened.
- 5 drain apricots, discarding liquid.
- 6 fold apricots, orange peel and nuts into batter.
- 7 fill greased or paper-lined muffin tins 3/4 full.
- 8 bake at 400 degrees for 18-20 minutes or until muffins test done.
- 9 cool 10 minutes before removing to a wire rack.
