New England Corn Fritters

Ingredients
- 1 cup flour, sifted
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 egg, well beaten
- 1/2 cup milk
- 1 cup corn, cream style
- 1 teaspoon grated onion
Recipe
- 1 mix and sift flour, bakking powder and salt. combine egg, milk and corn. stir into flour, mixing until flour is dampened. add onion. cover bottom of a hot skillet with a thin layer of shortening. drop mixture by small spoonfuls onto hot pan. brown on one side, turn over and brown other. cook about 3-4 minutes for small fritters.
