Light Wheat Bread

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 235 g bread flour
  • 125 g whole wheat flour
  • 21 g instant potato flakes
  • 1 1/4 teaspoons salt
  • 2 tablespoons sugar
  • 1 1/2 teaspoons yeast
  • 2 tablespoons olive oil
  • 9 ounces low-fat milk

Recipe

  • 1 heat milk to 100 - 110 f.
  • 2 combine dry ingredients in stand mixer bowl.
  • 3 add oil and milk.
  • 4 mix using the bread hook until the dough comes together.
  • 5 let rest 5 minutes.
  • 6 knead for 3 minutes.
  • 7 let rest 5 minutes.
  • 8 knead another 3 minutes.
  • 9 put in a lightly oiled bowl, cover and let rise until doubled.
  • 10 roll out and roll up forming a loaf.
  • 11 put in lightly sprayed loaf pan, cover and let rise until a well formed loaf appears.
  • 12 slash top if desired, bake in preheated 350 f oven for 40 minutes, internal temp should be between 190 - 200 f.
