Healthy Muffins

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup brown sugar
  • 1 cup wheat flour
  • 1 cup oat bran
  • 2 cups oats
  • 1 1/2 teaspoons cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 -3 cups blueberries (fruit of choice or any fruit is great and frozen blueberries work well)
  • 1/4 cup non-fat powdered milk
  • 1 cup milk
  • 1/4 cup nonfat plain yogurt
  • 1 egg

Recipe

  • 1 combine ingredients from brown sugar thru powdered milk.
  • 2 combine: milk, yogurt and egg .
  • 3 mix together.
  • 4 bake 375 degrees for ~20min.
  • 5 (i undercook them and refrigerate uneaten muffins. then pop one in a toaster even when ready to eat and it cooks through without drying them out).
