Oatmeal Blueberry Lemon Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1/4 cup quick oats or 1/4 cup old fashioned oats, uncooked
  • 2 tablespoons granulated sugar
  • 1/2 cup oats
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup skim milk
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 1 teaspoon grated lemon rind
  • 1 teaspoon vanilla
  • 1 cup blueberries

Recipe

  • 1 heat oven to 400 degreees.
  • 2 paper baking cups or spray bottoms only with no-stick cooking spray.
  • 3 for topping, combine 1/4 cup oats and sugar; mix well.
