Oatmeal Brown Sugar Muffins

Total Time: 12 hrs 30 mins Preparation Time: 12 hrs Cook Time: 30 mins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup light brown sugar
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup low-fat sour cream
  • 5 tablespoons butter, softened
  • 2 large eggs
  • nonstick cooking spray

Recipe

  • 1 mix together the first five ingredients (the dry ingredients) in a medium bowl.
  • 2 in a separate bowl combine the next three ingredients (the wet ingredients) and mix well.
  • 3 stir the wet ingredients into the dry ingredients. blend well. cover and refrigerate overnight.
  • 4 preheat the oven to 375 degrees f. divide mixture into a 12-cup muffin pan that has been sprayed with the nonstick spray.
  • 5 bake for 20 to 30 minutes, until a toothpick inserted in the center of one muffin comes out clean. allow to cool slightly before removing muffins from the pan.
