Oatmeal Brown Sugar Muffins

Ingredients
- 1 cup all-purpose flour
- 1 cup light brown sugar
- 1 cup rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup low-fat sour cream
- 5 tablespoons butter, softened
- 2 large eggs
- nonstick cooking spray
Recipe
- 1 mix together the first five ingredients (the dry ingredients) in a medium bowl.
- 2 in a separate bowl combine the next three ingredients (the wet ingredients) and mix well.
- 3 stir the wet ingredients into the dry ingredients. blend well. cover and refrigerate overnight.
- 4 preheat the oven to 375 degrees f. divide mixture into a 12-cup muffin pan that has been sprayed with the nonstick spray.
- 5 bake for 20 to 30 minutes, until a toothpick inserted in the center of one muffin comes out clean. allow to cool slightly before removing muffins from the pan.
