Lisa's Sourdough Bread

Ingredients
- 1 1/2 cups sourdough starter (proofed)
- 4 cups all-purpose flour
- 1 teaspoon salt
- 3/4 cup water
- 2 tablespoons honey
- 2 tablespoons olive oil (or preference)
Recipe
- 1 to the already proofed starter, add the flour and the salt.
- 2 separately, heat water slightly (40 secs in microwave), add honey to it, mix.
- 3 add liquid ingredients to dry ingredients, mix. you'll have to adjust flour and water as needed to get the right dough consistency (not too tacky).
- 4 lay dough out on floured table, and knead for a few minutes (i like the fold-over method). at this point i separate into 2 different dough balls, seams rolled under.
- 5 smear oil in a large bowl (or 2 bowls, one for each dough), put the dough ball in and turn it over, so that it has oil on both sides.
- 6 cover dough and allow to rise until doubled in size (depending on your starter, this could take 6-8 hrs or longer).
- 7 once doubled in size, punch down, shape into loaf or add to greased loaf pan, and allow dough to rise again til doubled (this could take several hours).
- 8 preheat oven to 375. bake loaves for approximately 35 minutes (that's when mine are usually ready). bake a little longer if you desire for bread to be less tender.
