Healthy Low-calorie Chocolate Biscotti

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • Servings: 12
  • 1/3 cup chocolate chips
  • 3 tablespoons cocoa
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/3 cup sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 400.
  • 2 in a small bowl, beat the eggs and vanilla together, set aside.
  • 3 combine flour, sugar, baking powder, cocoa and salt in a large bowl.
  • 4 gradually add the egg mixture and beat until dough forms.
  • 5 fold in chocolate chips.
  • 6 on a lightly floured surface, roll dough into a log, place log on greased cooking sheet.
  • 7 bake for 20 mins, or until firm to touch.
  • 8 let cool on wire rack for 10 minutes.
  • 9 cut log into 1/2 inch thick pieces, assemble on baking sheet.
  • 10 bake for 10-15 mins then flip each piece and bake for 10-15 mins more, remove from oven and enjoy.
