Olive Muffins

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 12
  • 2 cups chopped pitted black olives
  • 4 cups all-purpose flour
  • 1 cup grated onion
  • 1 1/2 cups olive oil, plus additional
  • 3 tablespoons chopped fresh mint or 2 teaspoons crushed dried mint
  • 2 tablespoons sugar
  • 2 tablespoons double-acting baking powder

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 rinse olives and drain.
  • 3 dry on paper towels.
  • 4 combine all ingredients, adding baking powder last.
  • 5 brush muffin cups with oil and dust with flour.
  • 6 (do not use paper baking cups.) bake for 40 to 45 minutes, or until golden.
  • 7 serve warm.
  • 8 variation: recipe can be baked in 9x5 inch loaf pans.
  • 9 increase baking time by 15 minutes.
  • 10 this recipe can be used to make muffins.
  • 11 or it will make 2 small loaves of bread.
