Peach Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 1 large egg
  • 1 cup milk
  • 4 tablespoons butter, melted
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 peaches, pitted and chopped but not peeled (about 1 1/2 cups)

Recipe

  • 1 preheat oven to 350°f
  • 2 beat egg in a large mixing bowl.
  • 3 stir in milk, butter, sugar, salt, cinnamon, lemon juice and vanilla.
  • 4 sift flour and baking powder together.
  • 5 stir flour mixture into egg mixture, mixing only until just blended.
  • 6 gently fold in the peaches.
  • 7 spoon into greased muffin cups, filling each only 3/4 full.
  • 8 bake 20 minutes.
