Great Nana's Zucchini Bread

Total Time: 24 hrs 15 mins Preparation Time: 15 mins Cook Time: 24 hrs

Ingredients

  • 3 large eggs, beaten lightly
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups zucchini, grated
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 1 cup nuts, chopped
  • 1 cup raisins

Recipe

  • 1 beat eggs, sugar, oil and vanilla together until thick.
  • 2 fold in zucchini until blended.
  • 3 sift together flour, baking soda, baking powder, cinnamon.
  • 4 stir in nuts and raisins.
  • 5 combine both mixtures using a spoon, mixing just enough to moisten ingredients (will still have some lumps).
  • 6 bake in greased + floured loaf pans at 350 f for 1 hour or until a toothpick tests done.
