Frozen Peanut Toaster Slices

Ingredients
- 1 3/4 cups flour
- 1/2 cup sugar
- 3 tablespoons baking powder
- 1/2 teaspoon salt (optional)
- 3/4 cup peanut butter (smooth or crunchy)
- 3/4 cup milk
- 2 eggs, beaten
Recipe
- 1 grease or line a 9x5x3 inch (1lb) loaf tin and set it aside.
- 2 in a bowl, sift flour, sugar, baking powder, and salt (if using).
- 3 add the peanut butter and rub in with your fingers as if making pastry, until it resembles crumbs.
- 4 add the milk and eggs; stir just until the mixture is well combined but do not overbeat.
- 5 turn the mixture into the loaf tin.
- 6 bake at 180c/350f for 40-45 minutes.
- 7 check to see if cooked by inserting a knife in the centre - it should come out clean.
- 8 remove from tin and put on a rack to cool.
- 9 when cool slice into 3/4 inch slices and either toast, or, if freezing stack the slices with a small sheet of greaseproof paper between each slice.
