Favorite Bake-off Banana Wheat Quick Bread

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 16
  • 1 1/4 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups mashed ripe bananas (3 medium)
  • 1/4 cup margarine or 1/4 cup butter, softened
  • 2 tablespoons orange juice
  • 1/4 teaspoon lemon juice, if desired
  • 1 egg
  • 1/2 cup raisins

Recipe

  • 1 heat oven to 350.
  • 2 grease and flour bottom only of 9x5 or 8x4 inch loaf pan.
  • 3 in large bowl, combine all ingredients except raisins; beat 3 minutes at medium speed.
  • 4 fold in raisins.
  • 5 pour batter into greased and floured pan.
  • 6 bake at 350 for 55 to 65 minutes or until toothpick inserted in center comes out clean.
  • 7 cool 10 minutes; remove from pan.
  • 8 cool on wire rack.
  • 9 wrap tightly and store in refrigerator.
