Pine Nut Oatmeal Muffins (lower Fat)

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup oats
  • 1/2 cup skim milk
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup brown sugar, not packed
  • 1/4 cup applesauce
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup pine nuts, slightly toasted

Recipe

  • 1 preheat oven to 350.
  • 2 mix together oats, flour, baking powder, and baking soda in a big bowl.
  • 3 in another bowl, mix together milk, sugar, applesauce, eggwhite, and vanilla extract.
  • 4 add wet ingredients to dry ingredients and mix.
  • 5 fold in pine nuts.
  • 6 spoon mixture into muffin tins sprayed with cooking spray (or lined with muffin cups).
  • 7 bake for 20-25 mins or until toothpick comes out clean.
