Pine Nut Oatmeal Muffins (lower Fat)

Ingredients
- 1/2 cup oats
- 1/2 cup skim milk
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 cup brown sugar, not packed
- 1/4 cup applesauce
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/4 cup pine nuts, slightly toasted
Recipe
- 1 preheat oven to 350.
- 2 mix together oats, flour, baking powder, and baking soda in a big bowl.
- 3 in another bowl, mix together milk, sugar, applesauce, eggwhite, and vanilla extract.
- 4 add wet ingredients to dry ingredients and mix.
- 5 fold in pine nuts.
- 6 spoon mixture into muffin tins sprayed with cooking spray (or lined with muffin cups).
- 7 bake for 20-25 mins or until toothpick comes out clean.
