Pear, Date And Hazelnut Loaf

Ingredients

  • Servings: 12
  • 50 g rolled oats
  • 300 ml milk
  • 240 g self-raising flour
  • 1 teaspoon baking powder
  • 100 g dried dates, roughly chopped
  • 75 g dried pears, roughly chopped
  • 75 g soft brown sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons honey
  • 1 egg, lightly beaten
  • 3 tablespoons roughly chopped hazelnuts, plus
  • 2 tablespoons extra hazelnuts, for top

Recipe

  • 1 put the oats in a bowl, pour in the milk and soak for 30 minutes.
  • 2 preheat the oven to 180°c lightly grease and line a 21 x 10cm loaf tin with baking paper.
  • 3 sift the flour and baking powder into a bowl and stir in the oats, dried fruit, sugar, cinnamon, honey, egg and hazelnuts. mix until combined.
  • 4 spoon the mixture into tin, level the top and sprinkle with the extra hazelnuts. bake for 45 minutes or until the loaf is golden and cooked through when tested with a skewer. cool in the tin for 5 minutes before turning out onto a wire rack to cool completely.
  • 5 makes approximately 12 slices.
