Mom's Best Ever Banana Muffins

Ingredients
- 4 bananas, regular size and overripe
- 3/4 cup sugar
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all-purpose flour ( or whole wheat)
- 1/3 cup butter or 1/3 cup margarine, melted
- 1 tablespoon ground flax seeds (optional)
Recipe
- 1 put bananas in the blender and blend until smooth.
- 2 add sugar and egg.
- 3 add melted butter and blend together.
- 4 pour wet ingredients into a large bowl.
- 5 mix dry ingredients together in a small bowl.
- 6 gently stir dry ingredients into wet until dry ingredients are moistened. batter should be slightly lumpy. stir only until you can no longer see any flour.
- 7 pour batter into lined muffin tin cups.
- 8 bake at 375 degrees for 20 minutes.
- 9 let cool for 15 minutes on a wire rack. these are best enjoyed still warm served with butter.
