Moist Banana Streusel Muffins

Ingredients
- 1/2 cup shortening
- 1 cup sugar
- 2 eggs
- 2 large ripe bananas, mashed
- 1/3 cup sour cream
- 1 pinch salt
- 2 cups sifted flour
- 1 teaspoon baking soda
- 1/4 cup sugar
- 3 tablespoons all-purpose flour
- 1/4 teaspoon cinnamon
- 2 tablespoons butter or 2 tablespoons margarine
Recipe
- 1 preheat oven to 350.
- 2 cream shortening and sugar together.
- 3 add beaten eggs and mashed bananas.
- 4 stir in sour cream.
- 5 sift flour, salt and baking soda together and add to banana mixture. batter will be on the thicker side.
- 6 for streusel, combine sugar, flour and cinnamon in a small bowl; cut in butter.
- 7 line or grease a muffin tin. fill cups 3/4 full.
- 8 sprinkle streusel topping over muffins.
- 9 bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
