Moist Banana Streusel Muffins

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 large ripe bananas, mashed
  • 1/3 cup sour cream
  • 1 pinch salt
  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1/4 cup sugar
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon cinnamon
  • 2 tablespoons butter or 2 tablespoons margarine

Recipe

  • 1 preheat oven to 350.
  • 2 cream shortening and sugar together.
  • 3 add beaten eggs and mashed bananas.
  • 4 stir in sour cream.
  • 5 sift flour, salt and baking soda together and add to banana mixture. batter will be on the thicker side.
  • 6 for streusel, combine sugar, flour and cinnamon in a small bowl; cut in butter.
  • 7 line or grease a muffin tin. fill cups 3/4 full.
  • 8 sprinkle streusel topping over muffins.
  • 9 bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
