Make-ahead Bran Muffins

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • 2 cups all-bran cereal
  • 1 cup all-bran bran buds
  • 1 cup boiling water
  • 1 1/2 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups buttermilk
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking soda
  • 2 teaspoons salt
  • 1 1/2 cups raisins

Recipe

  • 1 pour boiling water over all-bran and bran buds. cool.
  • 2 whisk together flour, soda and salt. set aside.
  • 3 cream sugar and oil together. add eggs and beat well. mix in buttermilk.
  • 4 stir in the flour mixture. add bran mixture and raisins, stirring until incorporated.
  • 5 place in covered bowl and refrigerate for up to 6 - 8 weeks.
  • 6 to bake: preheat oven to 400 deg. spoon mixture into greased or lined muffin tin. do not stir down. bake for 15 minutes.
