Honey Vanilla Bran Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/4 cups oat bran
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (8 ounce) container low-fat vanilla yogurt
  • 6 tablespoons honey
  • 2 eggs, beaten
  • 3 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup seedless raisin

Recipe

  • 1 preheat oven to 400. grease 6 large muffins cups.
  • 2 combine oat bran, flour, baking powder, baking soda, cinnamon and nutmeg in large bowl. combine yogurt, honey, eggs, oil and vanilla in small bowl until blended;stir into flour mixture just until moistened. fold in raisins. let stand 5 minutes. spoon into prepared muffin cups, filling 2/3 full.
  • 3 bake 20 to 25 minutes or until wooden pick inserted in center comes out clean. cool in pan on wire rack 5 minutes. remove from pan. cool on wire rack.
