Feta Corn Muffins

Ingredients
- 1 small onion, minced
- 1 cup buttermilk
- 1/4 cup fat free egg substitute
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 cup unbleached flour
- 1 cup cornmeal
- 2 teaspoons baking soda
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground black pepper
- 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/2 teaspoon baking powder
- 4 ounces feta cheese, crumbled
Recipe
- 1 coat 12 muffin cups with no-stick spray.
- 2 place the onions in a small bowl.
- 3 microwave on high for 1 minute.
- 4 in a medium bowl, mix the buttermilk, egg, honey and oil.
- 5 in a large bowl, mix the flour, cornmeal, baking soda, cumin, pepper, coriander, oregano and baking powder.
- 6 stir in the feta and onions.
- 7 pour the buttermilk mixture over the flour mixture.
- 8 mix with a rubber spatula until the dry ingredients are moistened.
- 9 spoon the batter into the prepared muffin cups, filling them about 3/4 full.
- 10 bake at 450 degrees for 15 minutes.
