Cornbread Salad

Total Time: 2 hrs 30 mins Preparation Time: 30 mins Cook Time: 2 hrs

Ingredients

  • Servings: 12
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar, if desired
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 1/4 cup shortening
  • 8 ounces cornbread
  • 3 green onions, fresh, chopped
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 2 teaspoons mustard
  • 1/2 teaspoon pepper

Recipe

  • 1 cornbread:.
  • 2 combine dry ingredients.
  • 3 combine others. mix both together.
  • 4 bake in greased 8" square baking pan in preheated 425 deg. oven 20-25 minute.
  • 5 salad:.
  • 6 crumble cornbread in bowl.
  • 7 add onion, pepper, & tomato.
  • 8 mix mayo, mustard, pepper, salt.
  • 9 cooked, crumbled bacon, optional.
  • 10 pour over, stir & chill.
  • 11 (my cornbread recipe is off of aunt jemima's yellow cornmeal).
