Cornbread Salad

Ingredients
- Servings: 12
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar, if desired
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 1/4 cup shortening
- 8 ounces cornbread
- 3 green onions, fresh, chopped
- 1 bell pepper, chopped
- 1 tomato, chopped
- 1/2 cup mayonnaise
- 1/2 teaspoon salt
- 2 teaspoons mustard
- 1/2 teaspoon pepper
Recipe
- 1 cornbread:.
- 2 combine dry ingredients.
- 3 combine others. mix both together.
- 4 bake in greased 8" square baking pan in preheated 425 deg. oven 20-25 minute.
- 5 salad:.
- 6 crumble cornbread in bowl.
- 7 add onion, pepper, & tomato.
- 8 mix mayo, mustard, pepper, salt.
- 9 cooked, crumbled bacon, optional.
- 10 pour over, stir & chill.
- 11 (my cornbread recipe is off of aunt jemima's yellow cornmeal).
