Plain Muffins (and Variations)

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 2 tablespoons fat (like butter, shortening, or vegetable oil)
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 egg

Recipe

  • 1 follow muffin method of mixing.[i think grandma meant to combine the dry and wet ingredients separately, then stir all together until just moistened leaving plenty of lumps. finally, cook at 400 f for 20 to 25 minutes.].
  • 2 variations:.
  • 3 whole wheat muffins - substitute 1 c whole wheat flour for 1 c flour. dates or raisins may be added, if desired.
  • 4 jelly muffins - plain muffins plus jelly. fill pans half full of batter, add 1/2 t of jelly to each pan, cover with rest of batter and drop another 1/2 t of jelly on top.
  • 5 date muffins - plain muffins plus 1/2 c chopped dates. add chopped dates to dry ingredients.
