Mini Cheddar Popovers

Ingredients
- 3 teaspoons oil
- 3/4 cup milk
- 1 egg
- 1 egg
- 3/4 cup all-purpose flour
- 1/3 cup shredded cheddar cheese
Recipe
- 1 heat oven to 425°f
- 2 spray 24 miniature muffin cups with nonstick cooking spray.
- 3 place muffin pans on cookie sheet.
- 4 add 1/8 teaspoon oil to bottom of each cup.
- 5 in small bowl, combine milk, egg and egg ; beat well with wire whisk.
- 6 lightly spoon flour into measuring cup; level off.
- 7 lightly spoon flour into measuring cup; level off.
- 8 add flour; beat until smooth.
- 9 stir in cheese.
- 10 place pans on cookie sheet in oven for several minutes to heat.
- 11 remove cookie sheet from oven; quickly divide batter evenly into hot muffin cups, filling each cup about 2/3 full.
- 12 bake at 425°f for 18 to 20 minutes or until popovers are puffed and deep golden brown.
- 13 immediately remove from muffin cups; serve warm.
