Low Fat Bran Muffins

Ingredients
- Servings: 12
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/3 cup brown sugar, packed
- 1 cup wheat bran
- 1 cup all-bran cereal (not flakes)
- 1 egg
- 1 tablespoon molasses
- 1/2 teaspoon vanilla
- 1 1/4 cups 2% low-fat milk
- 1/4 cup water
- 1/4 cup plain yogurt
Recipe
- 1 heat oven to 400 degrees.
- 2 mix first six ingredients in a medium bowl.
- 3 mix the rest of the ingredients together in a larger bowl.
- 4 add dry ingredients to wet ingredients. stir but do not overbeat.
- 5 spoon into non-stick muffin tins (or spray with vegetable oil spray).
- 6 bake for 16-18 minutes or until a knife comes out clean.
