Low Fat Bran Muffins

Total Time: 28 mins Preparation Time: 10 mins Cook Time: 18 mins

Ingredients

  • Servings: 12
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/3 cup brown sugar, packed
  • 1 cup wheat bran
  • 1 cup all-bran cereal (not flakes)
  • 1 egg
  • 1 tablespoon molasses
  • 1/2 teaspoon vanilla
  • 1 1/4 cups 2% low-fat milk
  • 1/4 cup water
  • 1/4 cup plain yogurt

Recipe

  • 1 heat oven to 400 degrees.
  • 2 mix first six ingredients in a medium bowl.
  • 3 mix the rest of the ingredients together in a larger bowl.
  • 4 add dry ingredients to wet ingredients. stir but do not overbeat.
  • 5 spoon into non-stick muffin tins (or spray with vegetable oil spray).
  • 6 bake for 16-18 minutes or until a knife comes out clean.
