Lemon Poppy Seed Muffins

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup poppy seed
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups granulated sugar, divided
  • 2 eggs
  • 1 2/3 cups plain yogurt
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon lemon zest, finely grated
  • 1/4 cup fresh lemon juice

Recipe

  • 1 preheat oven to 375 degrees f.
  • 2 grease a 12 cup muffin pan.
  • 3 in a large bowl, whisk together flour, poppy seeds, baking powder, baking soda, and salt.
  • 4 in a medium bowl, whisk together 1 cup of the sugar, eggs, yogurt, butter, and lemon zest until well blended.
  • 5 add the egg mixture to the flour mixture and stir until just blended.
  • 6 divide batter equally among prepared muffin cups.
  • 7 bake in preheated oven for 25 to 30 minutes or until tops are golden and a toothpick inserted in the center comes out clean. let cool in pan on a wire rack for 3 minutes, then transfer to the rack to cool slightly.
  • 8 in a small saucepan, heat the remaining sugar and lemon juice over medium heat, stirring, until sugar is dissolved. brush over warm muffins.
