Creole Corn Muffins

Ingredients
- 2 1/2 cups all-purpose flour
- 4 1/2 tablespoons cornmeal
- 4 tablespoons granulated sugar
- 2 tablespoons baking powder
- 1 teaspoon salt
- 3 eggs, beaten
- 3/4 cup shortening, melted
- 1 1/2 cups milk
- 2 tablespoons green peppers, chopped
- 2 tablespoons onions, chopped
- 2 tablespoons diced pimentos
- 3/4 cup american cheese, grated
Recipe
- 1 blend eggs, milk, and shortening together.
- 2 combine flour, salt, baking powder, sugar, and cornmeal.
- 3 add green pepper, onion, pimento, and cheese.
- 4 pour milk mixture into the cornmeal mixture.
- 5 stir just until mixed.
- 6 pour batter into hot greased muffin cups1/2 full.
- 7 bake at 400* for 25-30 minute.
