Creole Corn Muffins

Total Time: 55 mins Preparation Time: 25 mins Cook Time: 30 mins

Ingredients

  • 2 1/2 cups all-purpose flour
  • 4 1/2 tablespoons cornmeal
  • 4 tablespoons granulated sugar
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 3 eggs, beaten
  • 3/4 cup shortening, melted
  • 1 1/2 cups milk
  • 2 tablespoons green peppers, chopped
  • 2 tablespoons onions, chopped
  • 2 tablespoons diced pimentos
  • 3/4 cup american cheese, grated

Recipe

  • 1 blend eggs, milk, and shortening together.
  • 2 combine flour, salt, baking powder, sugar, and cornmeal.
  • 3 add green pepper, onion, pimento, and cheese.
  • 4 pour milk mixture into the cornmeal mixture.
  • 5 stir just until mixed.
  • 6 pour batter into hot greased muffin cups1/2 full.
  • 7 bake at 400* for 25-30 minute.
