Oatmeal Wheat Bread

Ingredients
- 1 tablespoon active dry yeast
- 2 1/2 cups warm water
- 2 tablespoons olive oil
- 1/4 cup honey (can use sugar)
- 2 cups whole wheat flour
- 1 cup bread flour
- 3/4 cup oats, ground (in food processor)
- 1/4 cup oats
- 1 tablespoon salt
- 3 tablespoons vital wheat gluten
- 1/4 cup flax seed meal
- 1 cup bread flour
Recipe
- 1 mix yeast, water and honey, let sit 10 minutes until foamy.
- 2 add to wheat flour, 1 cup bread flour, both oats, salt, gluten and oil and mix.
- 3 add the additional cup of bread flour until it pulls away from the sides of the bowl.
- 4 use a dough hook or your hands and knead for about 10 minutes until smooth and elastic.
- 5 put in a greased bowl and rise covered 1 hour or more until doubled in size, punch down, divide into 2 and rolls into loaves.
- 6 put in greased loaf pans and rise again until doubled, 45 minutes or so.
- 7 bake in preheated oven 350 degrees for about 30 minutes until golden and sound hollow when the bottom is tapped.
- 8 cool on racks.
