Oatmeal Wheat Bread

Total Time: 2 hrs 30 mins Preparation Time: 2 hrs Cook Time: 30 mins

Ingredients

  • 1 tablespoon active dry yeast
  • 2 1/2 cups warm water
  • 2 tablespoons olive oil
  • 1/4 cup honey (can use sugar)
  • 2 cups whole wheat flour
  • 1 cup bread flour
  • 3/4 cup oats, ground (in food processor)
  • 1/4 cup oats
  • 1 tablespoon salt
  • 3 tablespoons vital wheat gluten
  • 1/4 cup flax seed meal
  • 1 cup bread flour

Recipe

  • 1 mix yeast, water and honey, let sit 10 minutes until foamy.
  • 2 add to wheat flour, 1 cup bread flour, both oats, salt, gluten and oil and mix.
  • 3 add the additional cup of bread flour until it pulls away from the sides of the bowl.
  • 4 use a dough hook or your hands and knead for about 10 minutes until smooth and elastic.
  • 5 put in a greased bowl and rise covered 1 hour or more until doubled in size, punch down, divide into 2 and rolls into loaves.
  • 6 put in greased loaf pans and rise again until doubled, 45 minutes or so.
  • 7 bake in preheated oven 350 degrees for about 30 minutes until golden and sound hollow when the bottom is tapped.
  • 8 cool on racks.
