Mincemeat Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 18
  • 1 cup flour
  • 1 cup whole wheat flour
  • 1/4 cup sugar or 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 cup mincemeat (i prefer to use a brand with rum)
  • 1/2 cup milk or 1/2 cup orange juice

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 line with cupcake papers for easy removal.
  • 3 measure all 7 dry ingredients and sift into a bowl.
  • 4 beat egg until frothy.
  • 5 mix in oil, mincemeat and milk (or juice).
  • 6 add to dry mixture.
  • 7 stir to moisten.
  • 8 batter will be lumpy.
  • 9 bake approximately 20 minutes.
