Mincemeat Muffins

Ingredients
- Servings: 18
- 1 cup flour
- 1 cup whole wheat flour
- 1/4 cup sugar or 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 large egg
- 1/4 cup vegetable oil
- 1 cup mincemeat (i prefer to use a brand with rum)
- 1/2 cup milk or 1/2 cup orange juice
Recipe
- 1 preheat oven to 375 degrees.
- 2 line with cupcake papers for easy removal.
- 3 measure all 7 dry ingredients and sift into a bowl.
- 4 beat egg until frothy.
- 5 mix in oil, mincemeat and milk (or juice).
- 6 add to dry mixture.
- 7 stir to moisten.
- 8 batter will be lumpy.
- 9 bake approximately 20 minutes.
