Ginger Muffins

Ingredients
- 1/4 cup butter or 1/4 cup margarine, softened
- 1/4 cup granulated sugar
- 1 egg
- 1/2 cup molasses
- 1/4 cup hot water
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon clove
- 1/4 cup hot water
Recipe
- 1 combine butter, sugar, egg, molasses and first amount of hot water in mixing bowl.
- 2 beat together well.
- 3 measure next 6 ingredients into same bowl.
- 4 stir.
- 5 gradually stir second amount of hot water into batter.
- 6 fill greased muffin cups 3/4 full.
- 7 bake in 400 degree oven for 20-25 minutes until toothpick comes out clean.
- 8 cool in pan 5 minutes, then remove.
