Ginger Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/4 cup butter or 1/4 cup margarine, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 cup molasses
  • 1/4 cup hot water
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon clove
  • 1/4 cup hot water

Recipe

  • 1 combine butter, sugar, egg, molasses and first amount of hot water in mixing bowl.
  • 2 beat together well.
  • 3 measure next 6 ingredients into same bowl.
  • 4 stir.
  • 5 gradually stir second amount of hot water into batter.
  • 6 fill greased muffin cups 3/4 full.
  • 7 bake in 400 degree oven for 20-25 minutes until toothpick comes out clean.
  • 8 cool in pan 5 minutes, then remove.
