French Toast Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/4 cups milk
  • 1/3 cup oil
  • 1 (6 ounce) container yogurt
  • 2 teaspoons maple extract
  • 1/2 teaspoon vanilla extract
  • cinnamon, for sprinkling
  • powdered sugar, for sprinkling

Recipe

  • 1 preheat the oven to 350°f lightly grease or line 12 muffins tins.
  • 2 in a medium bowl, combine the flour, sugar, baking powder, salt, and cinnamon. in a large bowl, mix the milk, oil, yogurt, and extracts. add the wet ingredients to the dry ingredients and mix.
  • 3 spoon the batter into the muffin tins until each cup is nearly full. bake for 18 to 20 minutes until the muffins are lightly golden.
  • 4 let muffins cool in the tin for ten minutes, then transfer them to a baking rack to finish cooling. sift powdered sugar and cinnamon on top of each muffin and serve warm.
