French Toast Muffins

Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 cup sugar
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/4 cups milk
- 1/3 cup oil
- 1 (6 ounce) container yogurt
- 2 teaspoons maple extract
- 1/2 teaspoon vanilla extract
- cinnamon, for sprinkling
- powdered sugar, for sprinkling
Recipe
- 1 preheat the oven to 350°f lightly grease or line 12 muffins tins.
- 2 in a medium bowl, combine the flour, sugar, baking powder, salt, and cinnamon. in a large bowl, mix the milk, oil, yogurt, and extracts. add the wet ingredients to the dry ingredients and mix.
- 3 spoon the batter into the muffin tins until each cup is nearly full. bake for 18 to 20 minutes until the muffins are lightly golden.
- 4 let muffins cool in the tin for ten minutes, then transfer them to a baking rack to finish cooling. sift powdered sugar and cinnamon on top of each muffin and serve warm.
