Really Good Zucchini Bread

Total Time: 53 mins Preparation Time: 8 mins Cook Time: 45 mins

Ingredients

  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup unsweetened applesauce
  • 2 cups raw zucchini, shredded
  • 1 cup sugar
  • 1/4 teaspoon baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup nuts, chopped
  • 2 cups flour

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 put zucchini in strainer and press or squeeze with hands to get excess liquid out.
  • 3 beat eggs, sugar, applesauce, and oil together.
  • 4 add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
  • 5 mix together by hand.
  • 6 add zucchini (minus liquid).
  • 7 beat mixture.
  • 8 pour into 2 greased and floured loaf pans ( i use the baking spray with flour in it).
  • 9 bake 40 to 45 minutes at 350°f (i bake on middle shelf for 20 minutes then rotate and bake for another 20 to 25 minutes)
  • 10 recipe may be doubled.
