Really Good Zucchini Bread

Ingredients
- 3 eggs
- 1/2 cup oil
- 1/2 cup unsweetened applesauce
- 2 cups raw zucchini, shredded
- 1 cup sugar
- 1/4 teaspoon baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 teaspoons vanilla
- 1 cup nuts, chopped
- 2 cups flour
Recipe
- 1 preheat oven to 350 degrees.
- 2 put zucchini in strainer and press or squeeze with hands to get excess liquid out.
- 3 beat eggs, sugar, applesauce, and oil together.
- 4 add flour, baking powder, soda, cinnamon, salt, vanilla, and nuts.
- 5 mix together by hand.
- 6 add zucchini (minus liquid).
- 7 beat mixture.
- 8 pour into 2 greased and floured loaf pans ( i use the baking spray with flour in it).
- 9 bake 40 to 45 minutes at 350°f (i bake on middle shelf for 20 minutes then rotate and bake for another 20 to 25 minutes)
- 10 recipe may be doubled.
