Pineapple Oatmeal Muffins

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 1 (8 ounce) can crushed pineapple, not drained
  • 1 cup sour cream
  • 1 egg
  • 1/4 cup butter or 1/4 cup margarine, melted and slightly cooled
  • 1 1/2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup raisins (optional)

Recipe

  • 1 preheat oven to 350° and grease muffin pan.
  • 2 in a mixing bowl, combine pineapple w/ juice, sour cream, egg, and butter; blend well.
  • 3 in another bowl, combine the remaining ingredients; add to pineapple mixture; stir just until moist.
  • 4 spoon batter into prepared muffin pan, dividing batter evenly.
  • 5 bake for 30-35 minutes or until lightly browned.
