Orange Cranberry Nut Bread

Total Time: 1 hr 25 mins Preparation Time: 20 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1/3 cup orange juice
  • 2/3 cup buttermilk
  • 6 tablespoons butter, melted
  • 1 egg, beaten
  • 1 cup sugar
  • zest from 1 orange
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 cups chopped fresh cranberries
  • 1/2 cup chopped toasted pecans

Recipe

  • 1 preheat oven to 375f, butter and flour a 9-inch loaf pan.
  • 2 combine one and stir together.
  • 3 rub orange zest into sugar until aromatic, then add the rest of two.
  • 4 stir one into two.
  • 5 gently stir in three, do not overmix.
  • 6 pour into pan, bake 20 mins, reduce heat to 350f, bake 30-45 mins, until toothpick comes out clean.
