Oatmeal Raisin Muffins (food Processor)

Ingredients

  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup oats, quick cooking
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup vegetable oil
  • 3/4 cup raisins

Recipe

  • 1 using food processor steel blade: process flour, cinnamon, salt, baking powder and baking soda until blended, about 5 seconds. transfer to a large mixing bowl.
  • 2 place rolled oats and buttermilk in processor and let stand for 2 to 3 minutes.
  • 3 add egg, sugars and oil; process for 10 seconds. add to flour mixture along with raisins. stir with a wooden spoon just enough to moisten.
  • 4 spoon into paper-lined muffin tins. bake in preheated 400 degree oven for 18 to 20 minutes, until golden.
