Oatmeal Raisin Muffins (food Processor)

Ingredients
- 1 cup flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 cup oats, quick cooking
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 1 egg
- 1/4 cup brown sugar
- 1/4 cup sugar
- 1/2 cup vegetable oil
- 3/4 cup raisins
Recipe
- 1 using food processor steel blade: process flour, cinnamon, salt, baking powder and baking soda until blended, about 5 seconds. transfer to a large mixing bowl.
- 2 place rolled oats and buttermilk in processor and let stand for 2 to 3 minutes.
- 3 add egg, sugars and oil; process for 10 seconds. add to flour mixture along with raisins. stir with a wooden spoon just enough to moisten.
- 4 spoon into paper-lined muffin tins. bake in preheated 400 degree oven for 18 to 20 minutes, until golden.
