Moist And Easy Banana Bread

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 3 medium bananas, smashed
  • 1/2 cup nonfat yogurt (i used 0% fage greek yogurt)
  • 2 1/2 tablespoons butter, melted
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour
  • dark semi-sweet chocolate chips (optional)

Recipe

  • 1 preheat the oven to 350°f
  • 2 mix smashed bananas and yogurt together into a large mixing bowl.
  • 3 mix melted butter into the bananas.
  • 4 mix in the beaten egg, vanilla then sugar.
  • 5 sprinkle the cinnamon, salt and baking soda over the mixture and mix.
  • 6 add the flour in last, a little at a time, mixing after each addition.
  • 7 spray a 4x8 inch loaf pan with pam then pour mixture into pan. sprinkle ontop with chocolate chips if desired.
  • 8 bake for approximately 45 minutes until a sharp knife inserted vertically through the middle of the loaf comes out clean.
  • 9 cool on a rack.
  • 10 slice and serve with butter spread (optional).
