James Beard Banana Bread

Ingredients

• 4 tablespoons butter
• 1/2 cup packed brown sugar
• 1/2 cup honey
• 2 large eggs
• 3 ripe bananas, mashed
• 1 1/2 cups flour
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup chopped nuts
• 1 teaspoon orange zest (optional)

Recipe

• 1 preheat oven to 350°f.
• 2 cream the butter and sugar together.
• 3 add honey, bananas, and eggs; mix well.
• 4 sift dry ingredients together and fold into banana mixture.
• 5 fold in nuts and optional orange zest.
• 6 grease baking pan or muffin tins.
• 7 bake at 350° for 1 hour. if you bake this in muffin tins, it's about 20 minutes. it is done when toothpick comes out clean.
