Irish Soda Bread

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • 3 cups all-purpose flour
  • 6 tablespoons sweet butter
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking powder
  • 3/4 cup sugar
  • 1 1/2 cups currants
  • 1 3/4 cups buttermilk
  • 2 eggs, well beaten

Recipe

  • 1 grease a loaf tin with 2 tbsp of butter.
  • 2 melt 2 tbsp of butter in a small saucepan and set aside.
  • 3 sift the dry ingredients together, add the currents and toss well to coat.
  • 4 whisk together the buttermilk, eggs, and melted butter.
  • 5 add to dry ingredients and mix until blended.
  • 6 spoon batter into the loaf pan and dot with remaining butter.
  • 7 bake at 350°f for 60 minutes. cool slightly remove from the pan and cool completely on a rack, or serve warm.
