Ingredients

- 1 cup cranberries, dried
- 1/4 cup sugar
- 1/4 cup orange juice
- 1 cup whole wheat flour
- 1 cup whole wheat pastry flour
- 3/4 cup soy flour
- 1/2 cup ground flax seeds
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon orange rind, grated
- 1 egg, beaten
- 1/4 cup olive oil
- 1 1/4 cups orange juice
Recipe
- 1 mix together cranberries, sugar and orange juice. set aside.
- 2 in separate bowl, mix together the rest of the dry ingredients.
- 3 combine oil, egg and orange juice. pour liquid ingredients into dry ingredients.
- 4 mix until all ingredients are moistened.
- 5 fold in cranberry mixture.
- 6 pour into 8x8 baking dish. bake at 375 for 30-35 minutes.
