Cherry Popovers

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • Servings: 12
  • 3 eggs
  • 1 1/2 cups milk
  • 1 1/2 cups flour (all-purpose or whole wheat)
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2/3 cup pitted cherries

Recipe

  • 1 preheat oven to 450°f.
  • 2 combine milk, flour, salt, and butter.
  • 3 beat until just smooth.
  • 4 beat in eggs one at a time.
  • 5 stir in cherries.
  • 6 let batter rest at room temperature for 15 minutes.
  • 7 meanwhile, generously butter or grease 12 muffin cups.
  • 8 place in oven to preheat.
  • 9 when batter has rested, carefully remove pans from oven.
  • 10 fill each cup about 3/4 full.
  • 11 bake for 20 minutes.
  • 12 reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.
  • 13 remove pans from oven.
  • 14 carefully pierce a hole in the top of each popover to let steam escape.
  • 15 cook 5 minutes before serving.
