Cherry Popovers

Ingredients

- 3 eggs
- 1 1/2 cups milk
- 1 1/2 cups flour (all-purpose or whole wheat)
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2/3 cup pitted cherries
Recipe
- 1 preheat oven to 450°f.
- 2 combine milk, flour, salt, and butter.
- 3 beat until just smooth.
- 4 beat in eggs one at a time.
- 5 stir in cherries.
- 6 let batter rest at room temperature for 15 minutes.
- 7 meanwhile, generously butter or grease 12 muffin cups.
- 8 place in oven to preheat.
- 9 when batter has rested, carefully remove pans from oven.
- 10 fill each cup about 3/4 full.
- 11 bake for 20 minutes.
- 12 reduce heat to 350° and bake for 10-15 minutes longer, or until puffed and golden brown.
- 13 remove pans from oven.
- 14 carefully pierce a hole in the top of each popover to let steam escape.
- 15 cook 5 minutes before serving.
