Plum Bread

Ingredients

  • 1 1/2 cups plums, pitted and chopped
  • 1 tablespoon flour
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup margarine
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/3 cup plain yogurt
  • 1/4 cup brown sugar

Recipe

  • 1 preheat oven to 350. prepare a 9x5 loaf pan by greasing and flouring, or lining with baking paper.
  • 2 sprinkle the chopped plums with 1 tablespoon of flour. mix until each piece is thoroughly coated. set aside.
  • 3 in a small bowl sift together the flour, salt and baking soda. set aside.
  • 4 in a large bowl, beat together the margarine, sugar, and vanilla until light and fluffy. add the eggs one at a time. beat until thoroughly incorporated.
  • 5 add the flour to the egg mixture in small portions, alternating with spoons of yogurt.
  • 6 fold in the plums and spoon the mixture into the prepared pan. sprinkle the brown sugar over all and bake for 50 to 60 minutes.
