Peach Jam Quick Bread

Ingredients
- 1 1/2 cups flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup sugar
- 1/3 cup vegetable shortening
- 2 large eggs
- 3/4 cup peach jam
- 1/2 teaspoon vanilla
- 1/2 cup buttermilk
Recipe
- 1 preheat oven to 350°.
- 2 grease and flour two 9x5 inch loaf pans and set aside.
- 3 in a large mixing bowl stir together the flour, salt, soda, cinnamon and nutmeg and set aside.
- 4 in the large bowl of an electric mixer beat the sugar and shortening on high speed until light and fluffy.
- 5 beat in the eggs, one at a time, beating one minute after each addition.
- 6 add the jam and vanilla and mix well.
- 7 add the flour mixture and buttermilk alternately to the creamed mixture, beating well after each addition.
- 8 pour the batter into the prepared loaf pans and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
- 9 place the pans on a rack for 10 minutes.
- 10 remove the bread from the pans and let cool completely on the rack.
