Peach Jam Quick Bread

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • 1 1/2 cups flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3/4 cup sugar
  • 1/3 cup vegetable shortening
  • 2 large eggs
  • 3/4 cup peach jam
  • 1/2 teaspoon vanilla
  • 1/2 cup buttermilk

Recipe

  • 1 preheat oven to 350°.
  • 2 grease and flour two 9x5 inch loaf pans and set aside.
  • 3 in a large mixing bowl stir together the flour, salt, soda, cinnamon and nutmeg and set aside.
  • 4 in the large bowl of an electric mixer beat the sugar and shortening on high speed until light and fluffy.
  • 5 beat in the eggs, one at a time, beating one minute after each addition.
  • 6 add the jam and vanilla and mix well.
  • 7 add the flour mixture and buttermilk alternately to the creamed mixture, beating well after each addition.
  • 8 pour the batter into the prepared loaf pans and bake for 40 minutes or until a toothpick inserted in the center comes out clean.
  • 9 place the pans on a rack for 10 minutes.
  • 10 remove the bread from the pans and let cool completely on the rack.
