Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2/3 cup sugar
- 2 eggs
- 1/2 cup whole milk
- 1/3 cup unsalted butter, melted
- 1 tablespoon finely grated orange zest
- 2/3 cup prepared mincemeat
Recipe
- 1 preheat oven to 400°; line 12 muffin cups with paper liners.
- 2 in a large bowl, whisk together flour, baking powder, and salt.
- 3 in a medium bowl, whisk together sugar, eggs, milk, butter, and orange zest until well blended.
- 4 stir in mince meat until well blended.
- 5 add the egg mixture to the flour mixture, stirring until just blended.
- 6 divide batter equally among prepared muffin cups.
- 7 bake for 22-25 minutes or until tops are golden brown and pick comes out clean.
- 8 let cool in pan on wire rack for 5 minutes, then transfer to the rack to cool.
