Mincemeat Muffins Ii

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 2 eggs
  • 1/2 cup whole milk
  • 1/3 cup unsalted butter, melted
  • 1 tablespoon finely grated orange zest
  • 2/3 cup prepared mincemeat

Recipe

  • 1 preheat oven to 400°; line 12 muffin cups with paper liners.
  • 2 in a large bowl, whisk together flour, baking powder, and salt.
  • 3 in a medium bowl, whisk together sugar, eggs, milk, butter, and orange zest until well blended.
  • 4 stir in mince meat until well blended.
  • 5 add the egg mixture to the flour mixture, stirring until just blended.
  • 6 divide batter equally among prepared muffin cups.
  • 7 bake for 22-25 minutes or until tops are golden brown and pick comes out clean.
  • 8 let cool in pan on wire rack for 5 minutes, then transfer to the rack to cool.
