Lower Fat Banana Muffins

Ingredients
- 125 g plain flour
- 3 teaspoons baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/4 teaspoon salt
- 250 g mashed ripe bananas
- 3 tablespoons caster sugar
- 60 g reduced-fat sour cream
- 1 egg
- 1/2 teaspoon vanilla essence
Recipe
- 1 preheat oven to 180°c grease 12 cup muffin pan or line with paper muffin cups.
- 2 mix flour, baking powder, bicarbonate of soda and salt together in a bowl. in a separate bowl, beat together banana, sugar, egg and vanilla essence. stir in cream. stir into flour mixture until just combined. spoon evenly into prepared muffin pans.
- 3 bake in preheated oven for 15 to 20 minutes, or until a wooden skewer inserted into centre of a muffin comes out clean. allow to cool before serving.
- 4 for best flavour, place in an airtight container or plastic bag overnight.
