Lower Fat Banana Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 125 g plain flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon bicarbonate of soda
  • 1/4 teaspoon salt
  • 250 g mashed ripe bananas
  • 3 tablespoons caster sugar
  • 60 g reduced-fat sour cream
  • 1 egg
  • 1/2 teaspoon vanilla essence

Recipe

  • 1 preheat oven to 180°c grease 12 cup muffin pan or line with paper muffin cups.
  • 2 mix flour, baking powder, bicarbonate of soda and salt together in a bowl. in a separate bowl, beat together banana, sugar, egg and vanilla essence. stir in cream. stir into flour mixture until just combined. spoon evenly into prepared muffin pans.
  • 3 bake in preheated oven for 15 to 20 minutes, or until a wooden skewer inserted into centre of a muffin comes out clean. allow to cool before serving.
  • 4 for best flavour, place in an airtight container or plastic bag overnight.
